1/2 c coconut oil
1 1/2 c organic sugar
Chopped dark chocolate
1/2 C flour
1T tapioca starch
1 T ground flax
1/2 C organic cocoa powder mixed together until smooth in Ninja

mimis_eats This recipe is another one of those great ones for the crock pot. I’ve made this, several times! I use this recipe as a sort of cross between burritos and tacos, depending on my mood haha. It’s all a matter of preference how you serve it. This is also great left over for lunch!

Chicken and Black Bean Taco/Burrito Filling

Ingredients

3 chicken thighs, trimmed of fat (about 12-14 oz total)
1 can of black beans (15 oz), drained and rinsed
1 can Rotel (10 oz) with mild or medium chiles
1 1/8 teaspoon chili powder
3/4 plus 1/8 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1 medium scallion, diced
salt to taste

Directions

Season the chicken with salt, garlic powder, oregano, 1/8 teaspoon chili powder and 1/8 teaspoon cumin.

Add the beans and Rotel to the crock pot, add the remaining seasonings and mix. Place the chicken in the crock pot on top of the bean mixture.

Cover and cook on high for 4 hours.
Remove the chicken from the crock pot and shred it into pieces. Drain the bean mixture and return to the crockpot. return the chicken to the crock pot, mix with the beans and top with cilantro if desired.

Serve as a burrito with whatever you desire added to it. I like mine with avocado, tomatoes, sour cream and a bit of rice. You can also serve as tacos with whatever toppings you desire! This would probably be even good on a salad. The filling can be left in the crock pot on warm. Super yum!
