Roasted vegetable and tomato quinoa with steamed broccoli, carrots and celery
This made a HUGE portion of food which I couldn't finish but ️ it's super healthy and easy and oh so low in calories, fat and all the bad stuff we want to avoid! #healthy #food #vegan #vegetarian #eatclean #eatright #aubergine #ketchup #livehealthylivehappy
RECIPE: 95g quinoa (cooked) 1/2 courgette (into small cubes)
1/4 Aubergine (small cubes)
1/4 red pepper (chopped)
2tbs ketchup + turmeric, curry powder+garlic (1clove) 1 carrot (peeled & sliced) 1/4 broccoli 70g celery (sliced)

1. Line a saucepan with water and add the broccoli, celery and carrots - leave to cook
2. Meanwhile place the Aubergine, courgette and pepper in a non-stick tray (or line with baking parchment) and place into the oven on medium hear for ~15 mins or until vegetables are cooked
4. Add quinoa, crushed garlic and spices to a non-stick frying pan. Add the roasted veg when they are cooked. Also add the ketchup to the mixture.
5. Stir/mix for 5mins or until the quinoa is hot.
6. Remove everything from the heat (steamed veg and quinoa mix)- serve and ENJOY > I drizzled 12g brown sauce over the veg too but in all honesty I think they tasted nicer without the brown sauce so next time I'm gonna leave it out
