  •   murielgreen So easy and nutritious and ginger has healing anti-inflammatory properties . 16 0z bag red lentils , 3 garlic cloves , 2 in piece ginger , 2 pieces candied ginger , 1 tbsp olive oil , 1/4 tsp cumin , 1/4 tsp coriander , salt and pepper to taste . Mince garlic and ginger and sauté in the olive oil . Wash lentils and add to pot . Add 8 cups water chop 1 piece of the candied ginger and add . Add the cumin , coriander , salt and pepper . Bring to a boil . Simmer for 40 min. Blend with immersion blender and serve . Top with any garnish you like , I used some sour cream the other piece of candied ginger cut up and a cilantro leaf 4mon

  •   flavorful_fit 1 tsp coconut oil (or other oil)
    2 large garlic cloves, minced
    1 sweet onion, diced
    3 celery stalks, diced
    1 bay leaf
    1 & 1/4 tsp ground cumin
    2 tsp chili powder
    1/2 tsp ground coriander
    1/4-1/2 tsp smoked sweet paprika, to taste
    1/8th tsp cayenne pepper, or to taste
    14-oz can diced tomatoes
    5-6 cups vegetable broth, more if desired
    1 cup red lentils, rinsed and drained
    fine grain sea salt and pepper, to taste
    2 handfuls torn kale leaves or spinach
    1. In a large pot, sauté the onion and garlic in oil for about 5-6 minutes over medium heat. Add in the celery and sauté for a few minutes more.

    2. Stir in the bay leaf and the spices (cumin, chili powder, coriander, paprika, cayenne). You can add half the spices and add more later if you prefer.

    3. Stir in the can of tomatoes (including juice), broth, and lentils. Bring to a boil, reduce heat, and then simmer, uncovered, for about 20-25 minutes, until lentils are tender and fluffy.

    4. Stir in kale or spinach and season to taste adding more spices if you wish. @lisacoh @ataraperl @sljllc 5mon

Low fat, vegan, creamy corn and tortilla soup topped with homemade whole wheat spicy tortilla strips and avocado! I blended the soup until it was thick and creamy and then added some roasted corn and peppers to give it a nice bite.   •   _wifelife_ Recipe for my vegan, low fat, creamy corn and tortilla soup!! You'll need: 2 one pound bags of frozen corn (thawed), 1/2 yellow onion chopped, 4 garlic cloves sliced, 1 red pepper, 15 Roma or Campari tomatoes, 1 poblano pepper, 1 jalapeño pepper diced, 1 handful of chopped cilantro, 5 cups of vegetable broth, cumin, paprika, chili powder, salt, pepper, 1 1/2 cups of crushed tortilla chips (store bought). 6mon
  •   _wifelife_ You will also beed 1 tablespoon of flour. Heat your oven to 450 degrees. Place the tomatoes, red pepper and poblano pepper on a baking sheet. Drizzle a little olive oil and salt. Roast in the oven for about 10 minutes until the tomatoes and peppers start to soften and break down. Remove and place in the refrigerator. Once the vegetables cool, you will be able to remove the skin easily. Set aside. In a large soup pot, sauté the diced onion and garlic in a little olive oil. Once it starts to sweat and turn translucent, add the flour and stir together. This will thicken the onions and garlic and create a base for the soup. Add the skinless tomatoes and red pepper. Add the corn, diced jalapeño and whole poblano pepper (you will remove the poblano pepper before blending the soup). Stir all together. Add the tortilla chips and then add the vegetable broth or stock. Stir everything well and add the cilantro, cumin (tablespoon), paprika and chili powder. Don't add salt now, you can add it at the end. Bring up the heat so the soup comes to a slow boil and then lower and simmer for 15 minutes. Shut the heat off, remove the poblano pepper (use it as a garnish or in another dish) and blend with an immersion blender. The soup should be creamy and thick. If its too thick you can add a little hot water to thin it out. Sauté some corn and diced red pepper on a pan or roast in the oven. Add that to the creamy soup for some texture. Add onion and cook until tender about 2-3 min. Stir in the garlic and red pepper flakes, cook for another 2-3 minutes. Add the canned tomatoes and their juices, basil and vegetable broth. Stir in the roasted tomatoes. Cook for about 30 min on medium low heat. Use an immersion blender or regular blender to make the soup smooth with a few tomato chunks 9mon
