Part of my top 5 to #plant for new #gardeners because they will produce a lot without a lot of work! #zucchini for instance does not vine out therefore it makes a great compact bush style of veggie that won't take over your #garden...well not by much! #keep these guys warm though, changing temps often will result in blossom drop and remember if you cover them like I do they need some #bee time to be #pollinated! dr.michellecardel It has been cold and rainy in Colorado. Nothing like some soup to warm you up. I put on a bed of kale to get extra veggies in but this isn't necessary.

White Chili and Kale Soup
Ingredients:
1 tablespoon olive oil
6 skinless, boneless chicken breast halves - cubed
1 red onion, chopped
3 celery stalks, chopped
1 bunch of kale, chopped
3 cups low sodium chicken broth (or even better, homemade broth if you have it)
1 green pepper, chopped
1 red pepper, chopped
2 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon dried cilantro
1/2 teaspoon cayenne pepper
3 (15 ounce) can white northern beans, drained and rinsed
2 ounces shredded Monterey Jack cheese
Non-fat plain Greek yogurt, to taste (optional, replaces sour cream)
Hot sauce, to taste (optional)
Directions
1. Heat oil in a large saucepan over medium-high heat. Cook chicken, onion, celery, peppers in oil 4 to 5 minutes, or until onion and peppers are tender.
2. Stir in the chicken broth, garlic powder, cumin, oregano, cilantro, and cayenne pepper. Reduce heat, and simmer for 15 minutes.
3. Stir in the beans and kale, and simmer for 10 more minutes, or until chicken is no longer pink and juices run clear. Garnish with shredded cheese and hot sauce to your liking.
