SHIRO WETT/WAT [SHIH-row WEHT]: Roasted legumes (chickpeas, lentils, peas) powered and cooked in #berbere until smooth.
KITFO [KIHT-foe]: Ethiopian steak #tartare. Finely chopped beef seasoned with #mitmita and #kibe. Though traditionally served raw it can also be lightly cooked.
INJERA [ihn-JEH-rah]: Similar to a #crêpe, this spongy, sour flatbread is the basis of all Ethiopian meals. #Injera is placed on a large platter and each dish is served on top while addition injera is used to scoop up food for consumption.
