Da ich seit kurzem Kokosmehl zum Backen entdeckt habe, musste ich heute gleich mal diese Waffeln damit ausprobieren. Kokosmehl hat auf 100g nur 12g Fett, aber ganze 17g Protein ! Wirklich klasse Nährwerte und dazu noch superleckerer, feiner Kokos Geschmack. Einfach mal was anderes,- Ideal im Sommer . Hier die Zutaten zum Nachmachen der Waffeln (für 7 Stck):
270g Kokosmehl
200g Quark 5 Eiweiß 3 Eigelb
1 P. Backpulver (15g)
1 Vanilleschote
1 Tl. Zimt 1 El. Margarine od. Kokosöl
80g Rohrzucker od. Süßstoff ca. 100ml Mandelmilch
Alles gut verrühren und ca. 3 min pro Waffel ins Waffeleisen.
Hier gibts bei mir noch einen Nektarinen-Brombeerquark dazu ! Sooooo lecker !

Granola casera, super facil, rapida y el olor es increible.
Recipe: 1cup walnuts, 1 cup pecans, 1/2 cup old fashioned rolled oats, 1/3 cup organic honey. Use raw, organic ingredients.
Preheat the oven 300 F. Combine all the ingredients in a mixing bowl. Spread the mixture on a baking sheet and bake for 12-15 min, until lightly toasted. Enjoy!

upcloseandedible Haven't made #Paleo granola in a long time! It's supposed to be really hot this week so I'm going to ditch the eggs. This batch has almonds, cashews, sunflower seeds, pumpkin seeds, flax seeds and meal, chia seeds, cacao nibs, cinnamon, nutmeg, ginger, cardamom, cloves, honey, butter, and vanilla. No dried fruit, since it's hard on the gut and I'd rather put fresh berries on instead. Served today like cereal, but I also have a big batch of scd yogurt in the fridge. Yay for #breakfast ! 25min

These muffins are #YUM! I’ve been loving #carbs while #pregnant – bread, crackers, cereal, cookies, etc! But in an attempt to not go #crazy in these last few weeks I decided to make some #healthier muffins. These have a great taste and if you’ve had paleo “pastries” before you know that dryness can but an issue, but these are super #moist (half my #gender just squirmed at the word – i don’t mind it)

Paleo Blueberry Muffins

Serves: 8-10
#Ingredients
1 cup almond #butter
1 cup #almond meal/almond flour
3 #eggs, whisked
½ cup Raw #Honey
⅓ cup Unsweetened Shredded #Coconut
⅓ cup Virgin Coconut Oil, melted
½ teaspoon baking #soda
½ teaspoon baking #powder
¼ teaspoon sea #salt
pinch of #cinnamon
½ cup fresh #blueberries

#Instructions
Preheat your oven to 350 degrees.
#Mix all ingredients together in a bowl.
Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
#Bake for 15-20 minutes. Just keep an eye on it, they will #puff up and look #adorable.

simplifysupper Italian Open Sandwich. This fresh open sandwich features the bread as a delicious foundation for the marriage of delicious Italian flavors. You could also use smaller slices of bread and use these as appetizers.

Ingredients
4 slices artisan bread, your choice of flavor
2 large Avocados, sliced
1 pint Cherry Tomatoes, cut in half horizontally
0.25 cup Lemon Zest, about 2 lemons
0.5 cup Olive Oil
1 small Red Onion, sliced
1 pound Ricotta Cheese
4 teaspoons Sesame Seeds, toasted

Instructions
1. Mix the ricotta with 1/4 cup olive oil and the lemon zest. Add a dash of salt and pepper.
2. Top four slices of bread with the ricotta mixture.
3. Arrange the avocado slices, the tomatoes and red onion slices on top of the bread.
4. Garnish each sandwich with the toasted sesame seeds. Arrange on a plate and lightly drizzle with olive oil before slicing.
