vibrant_two Happy Sunday everyone!
Today I wanted a homemade treat to have with my fennel tea - Orange cupcake.
Just throw in the blender:
1 cup of sunflower oil
1 1/2 cup of brown sugar
1 peeled orange in four pieces
1 tsp orange zest
3 eggs.
Then slowly mix 2 cups of all purpose flour or whole wheat flour by hand and 1 tbsp of baking powder. Bake for around 40 min at 180C.

  •   rinnelson No way!! Where ru based? If I can find them in Saudi Arabia, surely u can too And heres a tip: it WASNT in the flour aisle! Found it at the bottom shelf of the Nuts & Dried Fruit aisle...and it was called "Finely Grounded Almonds" not Almond Flour 2h

vibrant_two Ok, this is probably the ultimate protein pancake for me. I am always trying new pancake recipes or cooking from scratch like this one
For three small pancakes you'll need:
Two eggs
Around 60g of double protein greek yogurt (i.e Danio)
6 drops of stevia
White flour until thick - depends on the size of egg, I have used around 1/2 cup.
Pinch of salt
Baking powder.
The topping is just sugar-free blueberry jelly that I and fennel tea!

Spray free parts of the asparagus with a little bit of oil before baking at 250C (475F) for approximately 20min. I am finally a lot better after the flu which has held me at home for 1.5 weeks now so that I'm confident to start a light workout again on Monday and be able to instruct my regular Zumba classes 2d

Here is ASIAN VEGGIES OMELETTE. Found out that bitter melon is easy to eat if you mix it with some sweet veggies. My daughter loved it! ••••••••••••••••••••••••••••••••••••••••••••••••••••••
RECIPE • 1/2 thinly sliced sea salt blanched bitter melon
• 1/2 cup thinly sliced kabocha squash
• 1 long onion cut diagonally
• 8 cherry tomatoes (cut into halves)
• 4 eggs (beaten)
• tbsp of oil
Heat oil in a pan & start cooking in veggies in order until cook through then pour egg beaten in circular motion making sure to cover all the veggies. Cover & cook for 3-5 minutes over low-medium heat. Slide onto plate, cut, share & enjoy!

vibrant_two Made a sandwich for me this afternoon. Whole rye bread with tomato slices, lettuce, grilled ricotta and sardine spread that I love It's a little too much for a snack buuut I will sweat it out of me later haha! Behind the sandwich my papaya juice.

Here is the recipe:
3 Ounces Unsweetened Vanilla Almond Milk (or Regular Milk/Other Milk Substitute)
1 Tablespoon (21g) Honey
3 Tablespoons (21g) Coconut Flour
3 Tablespoons (48g) Peanut Butter
16 Ounces (454g) Reduced Sodium Chickpeas
3 Scoops (90g) Vanilla Protein Powder
2 Teaspoons Vanilla Extract
1/2 Teaspoon Butter Extract
3 Tablespoons Sweetener
2 (8.75g) Low Fat Graham Crackers
4 Tablespoons (10g) Jet Puffed Marshmallow Bits
1 Tablespoon (15g) Sugar Free Chocolate Chips

Calories in the WHOLE recipe:
Calories: 1411
Fat: 43g
Saturated Fat: 11g
Sodium: 1295mg
Carbs: 141g
Fiber: 30g
Sugar: 40g
Protein: 115g

Calories in each bowl (if you make 4):
Calories: 352
Fat: 10.7g
Saturated Fat: 2.7g
Sodium: 323.7mg
Carbs: 35.2g
Fiber: 7.5g
Sugar: 10g
Protein: 28.7g

Combine all of your ingredients aside from your Low Fat Graham Crackers, Jet Puffed Marshmallows Bits, and Sugar Free Chocolate Chips into either a blender or food processor. Blend/process everything together. Pour your mix into a bowl. Top with your Low Fat Graham Crackers (crush them up), Jet Puffed Marshmallow Bits, and Sugar Free Chocolate Chips. Mouthgasm!

wholeandhappy Seriously one of my favorite ways to eat cauliflower! If you forgot about cauliflower, unforget because this super easy recipe takes 3 minutes!

Take cooked cauliflower and mix it up with:
Olive Oil
Sea salt
Nutritional yeast
Turmeric
...and either truffle oil or red pepper

I've tried both and they are equally awesome. If you want to take a little more time and add a little more goodness add some sautéed garlic!

Ridiculously delish and packed with a whole lot of healthy goodness!

annabelkarmel TRAIL MIX BARS

These are delicious and so easy to make.. 50g / 2 oz butter
3 tbsp golden syrup
100g porridge oats / oatmeal
80g / 3 oz brown sugar
30g / 1 oz Cheerios
40g/ 1 1/2 oz raisins
40g / 1 1/2 salted peanuts or pumpkin seeds
55g milk chocolate chips or dried cranberries
35g / 1 3/4 sunflower seeds
1/4 tsp salt.
Pre heat the oven to 170C / 335 F. Line the tin with baking parchment and grease lightly.

Put the butter and golden syrup in a small pan over a low heat until the butter has melted. Set aside to cool.

Put the remaining ingredients in a large bowl and stir together. Add the cooked butter mixture and mix well to combine. Transfer the mixture to the prepared tin and press down firmly. Bake for 30 to 35 minutes until the centre is just firm to the touch.

Remove from the oven , cook for 15 minutes then mark into 8 bats using a sharp knife. Allow to cool completely before lifting from the pan. Store in an airtight container.
