cleaneatingabi Nutella and banana protein muffins. Serves 12
Nonstick cooking spray (like 1 cal sunflower oil spray)
1 ¼ cup whole-wheat flour
45g unflavoured protein
2 teaspoons baking powder
2 large eggs
2 mashed bananas ½ cup plain non-fat greek yogurt
¼ cup skimmed milk
Nutella 200g pot (no eating it of the spoon)
½ cup chopped walnuts

1. Preheat your oven to 180 degrees celsius and spray the non stick cooking spray over your 12 muffin tray
2. In one bowl mash the bananas, add the natural yogurt, skimmed milk then beat in the eggs.
3. In another bowl mix the flour, baking powder and protein together.
4. Combine the dry mixture to the wet but try not to over mix!
5. Half fill each muffin cup with the mixture, then add one teaspoon of Nutella, then fill with the mixture the rest of the way.
6. Chop the walnuts and sprinkle a few on top of each muffin.
7. Bake for 15-18 minutes and then leave to cool.
Enjoy hot or cold and store in a container.

INGREDIENTS: 1/4 cup rolled oats 1 cup almond milk, or more if you don't want it so thick2 tsp cacao powder 1/2 tsp carob powder 1/2 tsp vanilla extract 1/2 - 1 dropper full of original @sweetleafstevia drops 1/3 cup tofu (I like silken, but any kind works) 1 tbsp chia seeds. DIRECTIONS: Place all ingredients except chia seeds inside a high speed blender and blend until smooth. Pour into a jar and add in chia seeds. This will seem very thin at first, but if you leave it for at least 3 hours or preferable overnight it gets THICK. 21min
