Vegan Breakfast Parfait

Recipe:
Vanilla Cashew Yogurt (makes about one cup)
1 cup cashews ground into flour
1/2 cup water(or more if you prefer thinner texture)
2 and 1/2 teaspoons lemon juice
2 tablespoons liquid sweetener
1 teaspoon vanilla extract
1/4 teaspoon vanilla powder
2 large pinches of Himalayan sea salt or sea salt

For Berry Parfait
2 cups mixed berries (fresh or frozen)
2 tablespoons dried coconut
1 tablespoon hemp seeds
1 tablespoon pumpkin seeds
Lime or Lemon Zest to taste
Combine cashews, water, lemon juice, sweetner, vanilla extract, vanilla powder and salt in a blender (preferable a high speed blender like vitamix).
Blend until smooth
Full bowl with berries of your choice, you can easily replace these with other types of fruit too, such as apple, pear, peach or banana.
Add vanilla cashew yogurt and finish with toppings of your choice.( I love adding dried coconut hemp seeds pumpkin seeds and lime zest)
