missbecki81 YUMSPIRATION Mmm comfort food! The weather recently has been absolutely freezing, and I've been making a lot more meaty, filling, comforting dishes than usual because of it. This recipe was thrown together in a shivery frenzy after being stranded in the cold and wind for an hour (and somewhat embarrassingly having to be rescued by Mr K!) .....I have to say for a happy accident it really hit the spot!

So the thing about casseroles is that meat which was formerly decently ok is slowly transformed into a melt-in-the-mouth taste sensation, and every flavour you add becomes richer and more delicious the longer you bake it. Traditional casseroles use potatoes to bulk them out, but I opted instead for butternut squash. White potatoes cause bloating and discomfort for many people, and are very high in sugary starches, so I always favour alternative root vegetables over potatoes. Butternut squash has become my new 'potato' over the last year, and I have to say I absolutely love it!

This creamy, spicy dish takes about 20mins to prepare, and an hour to bake, so you can be assured of maximum flavour with moderate effort - winner! It also contains super immune-boosting ingredients (such as garlic and fresh ginger) to ward away any chilly weather sniffles, and carrots and bell peppers for an extra shot of vitamin C. Not to mention extra virgin coconut oil for happy healthy hearts, and lovely fresh pork for much needed protein.

Here's what to do.......... MISS BECKI'S CREAMY PORK AND SQUASH CASSEROLE, AKA LOVE IN A DISH:

Pre-heat your oven to 180C.

Dice 1/2 a butternut squash, 1/2 an apple, 2 medium sized carrots, 1/2 a white onion, 1 garlic clove, a generous handful of fresh mange tout, 1 inch peeled fresh ginger, 1/2 a red chilli pepper (with the seeds removed) and 1 green bell pepper (also with the seeds removed).   •   missbecki81 Using scissors for ease, slice 2 pork loin steaks into cubes, set aside.

    Boil your kettle and then in a saucepan, add your butternut squash and cover with the boiling water. Bring it back to the boil, cover and leave to simmer.

    In a second saucepan, add 1 tbsp extra virgin coconut oil. When melted, toss in your onion, garlic, chilli pepper, mange tout and ginger. When the onions begin to brown, add the green bell pepper, the apple and the diced carrots, and 1/2tsp organic raw honey.

    When the bell peppers begin to 'pop', toss in your cubed pork steak and keep them moving. You will see they begin to turn beige - this is good!
    Add a crack of black peppercorns, 1/4tsp pink Himalayan salt, 1/2tsp cinnamon, 1/2tsp cumin, 1/2tsp hot paprika, 1/4tsp turmeric, 1/4tsp Allspice, and a shake of mixed herbs. Keep it moving until everything is coated in the herbs and spices and is crackling nicely.

    Stick a fork in your butternut squash; it should be reasonably soft! Drain it well and let it sit in the sieve / colander over the saucepan to steam completely dry.
    Add 1 tin of Suma Italian Tomato and Basil Soup to the pork and vegetables* and stir stir stir! Add 2tsp arrowroot powder to thicken it up. Add the drained butternut squash and 1 dessert spoonful of extra virgin olive oil to the pan, and gently mix it all together.

    Cover and let it simmer just for 5mins on a low heat. As it begins to bubble slightly, carefully pour it into your casserole dish, and cover with tin foil.

    Place it into the oven and set the timer for 55mins.

    Go and relax; read a book, write a song, snuggle a puppy, call a friend, watch an episode of your favourite TV show - something lovely to pass the time! (Or wash up whilst dancing to some awesome 80s classics; this means you get to work out AND you can relax at the end of your meal too :p )

    When the timer goes off, heat up a decent sized bowl and carefully remove your lovely bubbling casserole from the oven. Place it carefully on a trivet and remove the tin foil. Serve using a large ladle, preferably with a side of ginger tea, and enjoy 7min
  •   missbecki81 *PLEASE NOTE: You can very easily make your own tomato sauce by adding 500g pure tomato passata and the creamy top 2/3rds of 1 tin pure coconut milk to your pork and vegetables. It will be equally as delicious as my version and take no extra time at all. I just had this soup in my cupboard, and as it is made from 100% organic, natural ingredients, I decided to use it in lieu of my traditional passata / coconut cream base. If you choose to do the same, please do make sure that your soup and coconut milk are totally free from additives / thickeners / artificial flavourings etc, or all the nutritional goodness of this lovely casserole will vanish in a flash!

    NUTRITIONAL INFO:
    One bowlful (the whole dish serves 2 very hungry people!) of this beautiful casserole will give you 613 energy giving calories, 50g muscle defining protein, 49g good carbs (all from the veg), 27g heart healthy good fats, 15g natural sugar, and 8.5g essential fiber. 6min
