hmrasm Our kids always eat what we eat...which is pretty much the same thing most nights (chicken, green veggies and a slow burning carb.). But now doing this fun @blueapron thing- we made a yummy seared salmon with asparagus -new potato hash with lemon aioli #yum and they killed it. happy_kids_healthy_meals I think this Quinoa, Kale, and Collard Greens Salad just became one of my favourite meals *ever*. Mixed with a quick Caesar Dressing, topped with Coconut Bacon and diced Tomato, and surrounded by Strawberry slices, it was rich, flavourful, and filling without being heavy. And delicious. <3

I got the Quinoa going on the stove while I tossed Coconut Bacon ( http://www.fettlevegan.com/recipes/coconut-bacon ) in the oven, then sliced up Kale and Collard Greens and threw them in my biggest cast iron pan in a little Olive Oil. In between stirring it, I buzzed the dressing up in my blender. It all came together in 30 minutes.

The dressing was slightly adapted from the Briny Caesar Dressing in the Isa Does It cookbook for speed:
1/2 Cup Raw Cashews
1 teaspoon Garlic Powder
1/4 Cup Capers with Brine
2 Tablespoons Nutritional Yeast
2 Tablespoons Olive Oil
1/2 teaspoon Salt
3/4 Cup Water
1/4 Cup Lemon Juice
2 teaspoons Miso Paste

First powderize the cashews in the blender, then add everything else and blend until smooth and creamy.

One kid adored it and asked if she could have it for breakfast in the morning, too, and one kid only ate it grudgingly, so hit or miss I guess. :P
