Bake tomatoes, garlic,onions, fresh herbs (thyme,parsley,Rosemary ), olive oil, balsamic vinegar , salt pepper for 20 minutes. Add cod fillets on top and bake for further 15 mins.

To make the Baked fish

In a bowl mix 1 1/2 tbsp mayo, 1 tsp garlic powder, 1 tsp red pepper flakes, 1/2 tsp oregano, 1 tsp black pepper, 1 tsp vinegar.
Season swai or any choice of fish on both sides with salt. Baste only the top side with the mayo mix and top it up with panko bread crumbs abs drizzle 1 tsp of coconut oil on each fillet. Bake at 425 F for 22 to 25 mins!
To make the stir fried vegetables

In a pan on high heat add 3 tbsp oil. When its hot add 3 green bell peppers sliced, 1 onion, 1/2 cup corn, 4 to 5 leaves of fresh basil, 3 potatoes ( microwave for 6 minutes before cooking), 1 carrot and saute for 2 mins.
In a bowl, add 4 tbsp soy sauce, 1 tbsp garlic n ginger powder, 2 tbsp sugar, 1 tsp fish sauce (optional), 1/2 tsp black pepper, 1 tsp red pepper flakes.
Add the sauce to the pan and cook for 2 mins till you like the consistency of your vegetables. If you like it softer cook longer but make sure you cook it on high heat throughout. Enjoy!
