zeboy Homecooked: Edible Terrarium.

This was my 2nd time making it. The first time I made it was for the #testclub 7 course degustation meal and I just knew I had to tweak it. I've increased the level of spiciness 'slightly' to help offset the saltiness/brininess from the sea herbs especially the samphires. I also added Ikura for some pop-in-your-mouth factor and edible flowers to give the dish some life. Overall, I'm happy with the balance of flavours and will be attempting a dessert version soon enough. I'm just toying with some ideas at the moment. We might just call this the Terrarium Series. #zeboycooks #homecooking

zeboy #zeboycooks #behindthescenes Building an Edible Terrarium: Layering the base with my amped up Spanner Crab Rillette (Spanner crab, creme fraiche, double cream, pickled gherkins, cayenne pepper, togarashi, fleur de sel) and continued with a layer of Edible Soil (dark rye bread, dehydrated black olive soil, brown sugar). Lastly, we finish off with "planting" the sea herbs, micro herbs, broccolini, mushrooms, edible flowers and ikura and with a little leek ash dusted over. #homecooking
