Can I just add that this ain't just lunch. This will last me all day long away from home. yum_sequoia Late night post! Chocolate in a cup. Omg just had to share this creation. Highly nutritious late night chocolate treat? Is this even possible? You know the answer that's coming, right?! Yes it's totally possible, ready in less than 5 minutes and utterly delicious. What's in it??
***INGREDIENTS***
2tbsp cacao (raw cacao is best for even more flavour and above all more nutrients!)
Avocado
Dash of vanilla
Juice of 1/2-1 orange (or orange juice - a bit less than 1/2 cup - start withess and blend to get consistency you like)
1 tbsp of maple syrup (you can add more depending on how sweet you want it or less; feel free to substitute with honey, date syrup etc.)
About 1 tsp orange rind ( Ideally organic orange rind or orange essence - totally optional!)
--> enjoy straight away or chill for a bit in the fridge. I'm taking leftovers to work with fresh basil and raspberries on top!

Remember to enjoy with a small spoon to savour each mouthful. You will be smiling!

yum_sequoia It's a pancake kind of Friday! 2 ingredient pancake accompanied by 2 ingredient smoothie. Life really doesn't have to by complicated to be awesome! High in antioxidants, fiber, protein and of course amazing flavours! ***Ingredients***
PANCAKE
-1 egg -1 banana
Whisk an egg and in the same bowl you can mash ripe banana. Fry in 1tsp of coconut oil. Flavour and texture is perfect as is. No need for sugar loaded jam. Smoothie is the pancake's bestie!

SMOOTHIE
- 1 handful strawberries
- 1 handful blueberries
Blend all together. To reach astonishing texture don't blend until smooth but instead leave it little bit corse and at the end fold 4-5 whole blueberries into it. Best enjoyed with a spoon!

It's about time the world found out about Bulgarian herbs. The one that takes any bean or lentil soup to the next level is called: Tshubritsa Start roaming those Eastern European corner shops and start asking for it. You'll be amazed with the flavour.
Lentils are a highly underestimated ingredient. They are a smart source of plant based protein, rich in nutrients such as iron, great for digestion and very inexpensive. Eating healthy really doesn't have to cost you a fortune. And best thing? They take less than 30 minutes to cook. And did I mention the T word?T...t...t..t..t... T A S T Y!
***Ingredients***
Tshubritsa
Lentils
Fresh red bell pepper (or pointy one), if you have sun dried red pepper you are in for a treat!
Chopped onion
Garlic crushed
Red paprika (the darker red the better. I really love Hungarian variety!)
Veggie stock (I love using Marigold - organic vegan)
Carrots
Coconut butter (for sautéed onions and paprika)
Salt (Himalayan salt is best by far)
Water (of course!)
Slowly boil with lid on. I never blend this soup. The texture is great as is.

Was making this for friend and I this morning and I must admit her first reaction went like this: "Wow, this looks GREEN..." I hear a little sigh and get this suspicious undertone at the way she looks at me and the smoothie. I'm standing there confidently with a big enthusiastic grin on my face. I just know what I know and in this case I knew that she was going to LOVE it. Luckily she is a brave girl she gave it a go. The next thing I hear is: "Mmmmmm....." Another big big sip...."mmmmmmm....this is SO GOOD." ️ Seriously, all of you out there get started with your green smoothie breakfasts. I urge you, the benefits are endless. It's such an easy way of alkalising your body, increasing fruits, veg and fiber and that's just to name a few! Green smoothies are wonder foods for all age groups. Unless you are a baby you can never be too old or too young or too this or the other to start incorporating these as part of your routine. Made in less than 5 minutes and off you go. At the end of the day less time in the kitchen equals more time to play, right?! But please remember to enjoy every sip. You may be licking the glass!
***Ingredients***
2 Ripe bananas
Handful of kale (remove the hard stalk in the middle unless you want your smoothie to taste like a cabbage)
1 small tsp spirulina
1 small tsp baobab (optional)
1 heaped tsp bee pollen (maybe a little more according to taste)

1tsp raw coconut oil
Cup of frozen raspberries
Cup if filtered water

Hugging a beautiful tree with a friend during my lunch walk, eating a mouthwatering yogurt snack invention, and ending long day at work with reconnecting with my East European roots and making filled peppers with new potatoes and big bowl of tomato and cucumber salad while listening to traditional tunes. Even managed to catch up with a friend and to play with my tabby. Not a bad Wednesday after all. ***Recipes*** EASY STUFFED PEPPERS (my dinner)
Whisk organic egg and mix it with feta cheese
Stuff peppers with the above cheesy mixture and lay on a baking tray that's been rubbed with olive oil. Roast together with little new potatoes for about an hour. Keeping an eye on it every now and then.

MAGIC YOGURT (my delicious snack today)
Organic natural yogurt
Spoon of raw cacao powder
Spoon of bee pollen (optional)
1/2 tsp cinnamon
Honey to taste (Manuka is best)
- delicious as is or with fruits of your choice (I enjoyed mine with back and blue- berries. Yum!!) Non fried fish cake (lunch!)
Poached Salmon with mashed new potatoes and olive oil, garlic powder, small amount of butter and fresh basil and parsley)

Good amount of fresh greens and home made turmeric dressing on the side, because let's face it who likes to open their lunch box and find a soggy salad, right? What else do we have? Oh yes, beautiful cherries and blueberries for a big antioxidant boost and of course taste! And last but not least home made Moroccan snickers . Great news is that any of this could be prepared the night before. ***Ingredients*** .
SUPERPOWER DRESSING:
(Disclaimer ~ it may contain super colours, super flavours and superfoods!)
- Turmeric
- Cold pressed oil (I used pumpkin seed oil, but olive oil would have been great too)
- Chlorella (or spirulina - neither are essential)
- Manuka mustard (probably any mustard would do nicely)
- Apple cider vinegar (or lemon)
- Himalayan salt (or sea salt)
Whisk together and pour over your salad before serving

SUPERFOOD PASTA:
- Tortellini of choice
- Tomato sauce
- Sautéed onions
- Crushed garlic
- Grated courgette aka zucchini - Fresh herbs (I like to use rosemary or basil)

I wanted to show you how you can make something like pasta a nutrient dense meal. In this post I've used tortellini filled with spinach and ricotta. For sure it's not something I'd eat on regular basis. I advocate diet that contains as little gluten and dairy as possible to optimise our health but on occasions it's not such a sin. There are worse things to worry about.
Maybe not all gluten free and vegan but definitely nutritious and full of flavour!

I almost gave up I could see myself resorting to the unhealthy breakfast choices I'd have at work such as cornflakes, crunchy nut or fruit and fiber served with non organic poorly sourced dairy milk... That kind of breakfast would have been so yesterday and I always aspire to choose the super nutrients of tomorrow. Luckily I came up with a smoothie that didn't require fresh fruits and vegetables. I was saved.... This made me think about choice we have and the ones we make. What influences it?
How about you? Do you choose convenient sweetness from addictive artificial sugar and crunch from over processed nutrient depleted cereal with misleading promise of health? Or do you go for sweetness from mineral packed madjool dates, crunch from nuts and seeds and nutrient packed flavours that will promise you energy throughout your morning and nourish your body in and out? Do you choose unstable energy, cravings, bad skin, weight gain, irritability or do you instead act smart and give your body, skin, moods and attitude to life a chance to stabilise and even uplift? I know what I go for. The transformation can start from one single change, nutrient packed breakfast.
My favourite things to include in my smoothies include something dark green, fresh fruits ideally berries of some sorts and ripe banana and nuts or seeds. Rest I add according to what I aim for therapeutically and of course taste. ***Ingredients***

Acai powder
Bee pollen
Sesame seeds
Poppy seeds
Cinnamon
Sprouted brown rice protein powder
