youssefsarhan Tuna couscous, so simple to make.

Lightly fry turmeric, cumin, black pepper, cayenne pepper and dried coriander for a few minutes. Add vegetable stock and peas, then simmer for 5 minutes.

Prep a bowl of couscous with a tin or two of tuna tossed through. Once the peas are cooked, gently pour stock over couscous and tuna until they are submerged by about a cm. Then cover with a plate. Once all the stock is absorbed, it's good to go. If the couscous is still hard, add a tiny bit of boiled water and cover again. Garnish with fresh coriander or flat leaf parsley.
