veggiecation Tantalizing Thai Soup

Ingredients
1/2 medium yellow onion, chopped
3 garlic cloves, chopped
1.5 Tbsp coconut oil
3 carrots, peeled & diced small
1 bunch of asparagus, diced small
2 cup of spinach
32 oz vegetable broth
8 oz water
2 Tbsp liquid amino acid (or Tamari or light soy sauce)
1 tsp sesame oil
4 - half inch pieces of ginger root
1 package of extra firm tofu, diced small
8 oz of brown rice vermicelli noodles, cooked
Salt and pepper to taste

Directions
In a large soup pot, sauté onion & garlic in coconut oil until onions are translucent.
Add carrots and asparagus. Stir and simmer on medium heat for 3 minutes.
Add broth, water, liquid amino acids (or tamari/soy sauce), sesame oil, and ginger root.
Bring to a boil then lower heat. Cover pot and simmer for 10 minutes.
Stir in spinach and allow leaves to wilt.
Add in tofu and cooked noodles. Stir gently to combine.
Remove from heat.
Season to taste with salt and pepper.
Serve hot and ENJOY!

1.5 cups of cooked barley, cooled
1 cup of red kidney beans
1/4 cup chopped red onions
1/4 cup of chopped fresh basil
1 Tbsp olive oil
1/2 Tbsp balsamic vinegar
1/4 tsp garlic powder
1/8 tsp sea salt
1/8 tsp fennel seed

In a medium bowl, combine barley, beans and red onion.
Drizzle in olive oil and toss.
Sprinkle in garlic powder, salt & fennel seeds. Toss again.
Drizzle in balsamic vinegar. Toss again.
Gently fold in basil.
Serve cool and ENJOY!

3 carrots, peeled & sliced
3 parsnips, peeled & diced
32 oz vegetable broth
8 oz filtered water
1 - 15.5 oz can of chick peas, drained & rinsed
1/2 Tbsp dry rosemary
1 tsp dry thyme
1 tsp dry sage
2 cups barley, cooked
Salt & pepper to taste

Directions

In a medium pot, sauté onions and garlic in olive oil until onions are translucent.

Add carrots, celery and parsnips. Cook on medium heat for 3-5 minutes.

Add broth, water, chick peas and herbs. Bring to boil then lower heat. Cover pot and allow to simmer for 8-10 minutes, stirring occasionally.

Remove from heat and stir in barley.

Season with salt and pepper to taste.

Serve hot and enjoy!

TIP: Soup's flavors will develop overnight and taste even better the next day!

In a saucepan, whisk together 1/2 cup light coconut milk, 1/4 cup
filtered water & 1/2 cup of pumpkin puree.

Bring mixture to boil.

Stir in 1/2 fresh banana diced, 1/2 cup whole oats and 1/4 tsp cinnamon.

Reduce heat to low and cook covered for 5 minutes.

Remove from heat.
Top with a sprinkle of pumpkin seeds and ENJOY!
