tyrabanks Teamwork makes the dream 'werk'!
At culinary school, we get judged on how we plate the food - we have to think about how we'd do it if we were serving it to someone at a restaurant. Fish on the Remoulade. French Fries stacked in a box pattern. Cabbage slaw in a neat little pile. Ours got a pretty good critique. Not like, "Oh my gosh Team Fried Fish, this is the best plating I've ever seen!" But not, "What the heck is that crap on that plate???!!!" either.

tyrabanks What the heck is that white stuff in the middle? Tartar sauce? Nope! It's REMOULADE. I guess it's kinda like high class tartar sauce or somethin'. Oh, and there are MANY steps to make it.
Guess what I had to make first. MAYONNAISE! From scratch!!! You know you're learning serious skillz when you can make stuff on grocery store shelves from scratch! But homemade mayo is not easy to make by yourself if you're a newbie. Nope. You need teammates and my mama was right there next to me.
She had to slowly pour oil into my mixture to get it to emulsify. You know she was totally bossing me around, right? "Ty, you're not holding the whisk right." "Ty, you're mixing too slow." "What the HELL are you DOING, Ty???!!!" But, she knew what she was talking about because our Mayo tastes better than any store bought stuff I ever put on a sandwich.
But, the remoulade? Well, my mama measured the mustard um...shall I say...all WRONG. "Mama, NOW our remoulade tastes like it should go on a hotdog with some relish!" But, MIZZ MASTER CHEF SANDY taught us how to get that mustard taste out. And that technique is...
Oh, the secrets of my culinary lessons that remain secrets... I gotta leave some mystery to this adventure, right?

tyrabanks Enough about my FFFF - Famous Fierce Fried Fish because to be honest, I need to get it right by not adding too much darn pepper! So it's not famous YET.
But what SHOULD be famous is my teammates's red cabbage slaw. It has fennel in it, which I don't like at all, but whatever he did with this dish made me lick my cabbage spoon! I plated it for the buffet and shaped it up a bit and added the green garnish to make it look like one big carrot. Bugs Bunny would be proud.

tyrabanks Check out that fish! I fried it in class. That deep fryer grease was so HOT! I was terriFRIED!!! But it came out really good. Our instructor, Bad Ass Genius Chef Sandy, joked that I love me some pepper. Yeah, I am heavy handed with the pepper mill. Need to back up on that shake of my wrist. Nevertheless, my mama gave big props on my fish. Can't wait til York is old enough to taste his mama's FFFF - Famous Fierce Fried Fish!

tyrabanks I have to say that when @theculinaryinstituteofamerica described my cooking course as "Boot Camp", they weren't joking! This is a photo of me about to leave for day 2 of class. Calm. Cool. Collected. But after an insane day of learning to FRY all types of things, I FEEL friggin' FRIED! The cod I was assigned was scary as hell to cook. I had to hold the fish inches from the hot grease in the deep fryer for about 10 seconds before letting go! Can you say TERRIFIED?! But, look Ma: No Burns! Just good, crunchy-on-the-outside/moist-on-the-inside fish. And my teammate killed it on the French Fries. They tasted like heaven. We even concocted some homemade seasoned salt to sprinkle all over them. I'm from INGLEWOOD, CA so seasoned salt is a MUST! IngleHOOD in the (Culinary School) house! 3d

tyrabanks My team and I worked super hard on this Chicken Provençal. It looks so simple - but it AIN'T!
The theme of the day was SAUTÉING. You have NO idea how much time this took. First, we made all kinds of stocks on day one because we would use them as the base for most of our recipes all week. Stocks takes TIME! We used chicken stock for this sauce that we THEN had to made a ROUX from. My teammate did a magnificent roux. I then took his roux (yes, so many steps) and made this sauce which has tomatoes and olives as a main ingredient. I used the FOND (all the goodness that was stuck to the pan) from the sautéed chicken to give the sauce its intense flavor.
I was so tired after all that work, I almost didn't wanna eat. ALMOST didn't want to. Because you know I chowed down!

Me: "My Chicken Provençal is tastier than YOUR dish, Mama."
Mama: "No, Ty. My Beef with Broccoli is gonna blow your lil' chicken away!"

tyrabanks Guess who joined me on my culinary adventure! My mama!
For Mother's Day, her gift from me was for her to take her cooking chops to the next level. Since my bro and I have moved away from home, my mom has lost inspiration to cook for herself. She says it's not fun to cook when there's no children to share the food with.
But now, thanks to @theculinaryinstituteofamerica, her fire has been re-lit! She is soooo amazing in class. And she BOSSES me around BIGTIME! "Ty, you're holding the pan wrong!!!"
Augh!!!!
But there's still no one else that I'd wanna be in the cooking classroom with. We are going through some serious Mama/Daughter bonding.

tyrabanks I have never been one to be very excited about cooking. I put all of my energy into my work and to succeeding, so instead of cooking, I eat at restaurants all the time, order in, or defrost frozen food in my microwave. That all changed the day my son was born.
I do not want him to grow up thinking that cooking is what happens only in fancy or fast food restaurants. I do not want the only cooking he witnesses to be when he turns on his television and sees famous chefs create masterpieces. I want to be his chef. I want him to go to college and miss his MOMMY'S masterpieces. I want all of his friends to be fighting to come to his house to sample his mother's culinary creations.
So, I did something about it. I enrolled in ad intensive Boot Camp at @theculinaryinstituteofamerica in St. Helena and I have to say, it changed my life. Come back today to experience my culinary journey in pictures...
