  •   twintough @jennholmesfalk Yay!! So exciting!! You're gonna do great!! This is SO easy to make!! First, make some quinoa - you can make it in the microwave or on the stove. I used 1 cup dry, and added 2 cups vegetable stock. While that's cooking, brown 1/2 lb ground beef in skillet. Add 1 can kidney beans, 1/2 bell pepper, diced, and 1/2 cup diced zucchini. Make sure ingredients are well combined, heated through, and season to taste. I used smoked paprika, cumin, garlic powder, garlic salt, and ground pepper. Add your cooked quinoa to the pan, and mix thoroughly. Cut the stem and seeds out of 5-6 large peppers. Place on baking sheet, fill with quinoa mixture, and bake for about 15 min at 375. That's it! Enjoy! 1h
