Finally made what I missed out on on our last trip to NY (thanks to the hurricane). I hope it's close enough to David Chang's version.

Separated the slabs of pork belly from the marinate after they were sous vide for 10 hours and refrigerated for 2 days. It was easier to remove the fat from the marinate since they floated to the top and solidified. Now cooking down the marinate so i can use it as glaze/sauce.

tuazon81 Lunch before I immerse myself into making steamed buns (which I'm still trying to wrap my head around). Tried to liven up a very dry and flavorless (on its own) tempeh by stir frying it first with spices and lemon juice then sauted with onions, ginger and mushroom. Tempeh soaks in flavor at such a slow pace that you have to take your time cooking it. 2d

  •   tuazon81 @erika_vc yeah it's so compact that it takes a while to infuse it with any flavor. Just stir fry with any spices you want, generously for a couple of minutes and then add some liquid (mine was lemon juice). The liquid at first washed the spice coating the tempeh but as you cook it in low heat, it gets soaked back in. From there, just cook it with the rest of your ingredients for the dish. 2d
