•   tiglezan @rainydaybites we just tested yet a couple of times to make pancakes and now petit choux... I can definitely say that there is difference with home grinded fresh flour and ready made from the supermarket. Different texture and taste, scent. They say even that vitamins and minerals tend to disappear quicker from bought flour. It takes just a day for these to be ruined... You have rally to try this, pity you are not closer, I should give you some to test :) 6d

tiglezan There are some advantages being on sick leave... I made quick a classic béarnaise sauce, not #modernist, nor sous vide, just plain old fashioned real and tasty. Despite that I managed to break the sauce I could still begin on again beating an egg yolk with the separated sauce - and it took about just twenty minutes... Pity that many people don't know about how easy is to make these things and they are buying a lot of ready-made things full of chemicals with nothing to do with #natural ingredients... I had some left-over sous vide beefcheeks from last week and I made yet again crash potatoes.
This time I thought to use the milk solids, the proteins from the melted butter for the béarnaise and I drizzled this on the potatoes before they went in the oven. I was hoping on some Maillard effect with burning those proteins and make them crispier.

With no effort we had a fun and tasty lunch even on a cloudy #autumn Monday

And the cocoa powder and jelly just enhances the tastes... Mind blowing that a common vegetable can taste so good :) 2w

Vj hade varit och handlat på Reko Ekologisk Mat och Hälsa och köpt fina färska blomkål - som jag egentligen inte tycker om, men tillagad så hör blev det en matupplevelse! Kokt till risotto, torkad till chips, karamelliserad och med kakaopulver och kakao hellycklig som förstärker smakerna blev det otroligt gott. Kommer säkert att göra om :) 2w
