  •   studiogabe @salitabacchi hmmm. now I remember seeing "x" cuts somewhere before. I definitely cut some too deep, and usually I love these neurotic patient cooking things but no joy tonight. I felt like I got really fresh firm chestnuts too, where do you buy these Italian wonders? 1mon

  •   salitabacchi No where special - just no frills usually - I just make sure they are from in fact from Italy and look really good - go through and pick each one - have a nice sheen, with a flat side (when no frills brings in the massive boxes-full at this time they are usually nice and fresh) - if you're up to it - try it again sometime! Such a nice winter thing to do... Good luck! 1mon

  •   rebeccajwong My grandpa does the boil first and he usually takes a fork and stabs a few holes in each. Not as pretty as an X but probably faster! 1mon
