spinninghq Day 66 of #100fitdays: You can still enjoy the foods you love, like #pizza. Make it healthier by substituting a cauliflower crust.
Cauliflower crust pizza: Use a food processor to chop up a head of cauliflower until it looks like the size of grains of rice. Microwave the processed cauliflower in a covered bowl for 7 minutes. Place the cooked cauliflower in a tea towel and squeeze out ALL the water. Make it as dry as possible.
In a bowl combine the cauliflower, 1 egg, 1/3 cup shredded mozzarella, ½ tsp fennel seed, 1TBS Italian seasoning, ¼ tsp salt and 1/8tsp ground pepper.
Line a baking sheet with parchment paper and make your cauliflower mixture into an even thickness on the pan.
Bake for 15-20 minutes at 450 degrees.
Remove the pan and turn the oven to broil. Add toppings of your choice (pictured: marinara sauce, mozzarella, artichoke hearts, chicken and arugula)
Place under broiler until the cheese is bubbly.

1 zucchini
2-3 T coconut flour or 3-4 T almond flour
1 egg (almond flour) or 2 eggs (coconut flour)
1 T coconut oil salt, pepper and paprika
Mix everything except the veggies and let it sit while sautéing the veggies, then combine everything.
