    http://glutenfreeonashoestring.com/gf-lemon-bars-for-dad-plain-lemons-for-me/ *The changes we made were to make it dairy free. While I'm not indulging in much (lemon desserts aren't really my thing) i still wanted a nibble to taste for texture and flavor.
    So we: •subbed butter for canola oil. Instead of 9 tablespoons the dough was plenty combined at 8 tablespoons. (8 tablespoons = 1/2 cup oil) . Came out great with an increased bake time. Next time I'd like to do palm shortening instead. • I used our favorite local gluten free flour and it has xantham gum and it came out fine. Could try King Arthur ap/gf flour next time too. •for the custard, next time I'll use less sugar. It's really sweet. Very good, but I'd like less sweet more lemon. She calls for 1 cup sugar and I think I'll do 1/2 -3/4's that next time. (I'd love to try coconut sugar if we didn't have a coconut allergy in the house.) Enjoy! 3w

rebeccalinh Homemade apple chips for the 12 year old are crispin' up in the oven this morning. So easy to make! Slice thinly, sprinkle with cinnamon, bake at 275° for 2'ish hours, flip apples over periodically, bake until they no longer feel soft in the center and cool on wire rack. rebeccalinh #Whole30 day THIRTY! Thirty days without dairy, gluten, grains, sugar, and alcohol. I couldn't have done it without my bf @sarahdelo who also completed the program. The thirtieth day is not done but will obviously be finished off with good choices. There were days I felt silly photographing all my meals but I'm glad I did. 81 photos later is proof that this is probably the best I've eaten and treated my body consecutively in my adult life. And yes, despite all the food I did lose weight, though my main reason for doing it was a dietary reset ... it seemed I was coming up with all sorts of onset food allergies triggering histamine reactions. I couldn't figure out if it was dairy, wheat, sulfites, citrus... it was getting out of hand. From day one my symptoms cleared up and by day 4 I was entirely off medication. For the most part, I did the #whole30 low histamine meal plan (it limits more foods) but only allowed eggs in moderation only a few times a week. I feel better, sleep better, my skin is clearer and "glowier" as my neighbor described, and I reaped a wealth of nutritional/psychological information that I'll be happy to continue to use in the future. rebeccalinh HAPPY WEEKEND! So the hardest part for me about doing the #whole30 was giving up alcohol. Wheat, dairy, legumes.... no problem. Sugar? Well... I had my reasonable moments with that one. But sadly I realized I had fallen into a habit of the daily nightcap or two or... 🏼 🏼This drink right here has been the Rx for that bubbly fizzy slightly sweet beverage I craved. 1/2 coconut water + 1/2 soda stream carbonated water + a couple cucumber slices + ginger saved the days. I can gladly say, aside from all the health benefits I've reaped while doing this... this is the one I unexpectedly feel the most accomplished about.
