podandseed Whats on your chopping block? Prepping BEAUTIFUL sweet potatoes for roasting! RECIPE:
4-5 Sweet potatoes, cubed (same size)
Olive oil
Sea Salt and Ground black Pepper to taste
INSTRUCTIONS:
Preheat oven to 425F
On a sheet pan place parchment paper
Peel and cube your sweet potatoes, making sure they are about the same size, so they cook evenly. ½-1 inch cubes
Add potatoes to a bowl. Drizzle with olive oil. Add sea salt and ground pepper. Use your best tools in the kitchen, your hands and toss until all is coated.
Place on sheet pan spreading the sweet potatoes out. This ensures even cooking.
Bake for 15-20 minutes
Turn potatoes over midway.
When perfectly roasted remove from oven and sprinkle with more sea salt and ground pepper to taste. podandseed Have you got a couple of over ripe bananas sitting around collecting fruit flys? What do you do with them? I make my breakfast go to muffins. "Banana AlmondMeal Muffins". 2 flax eggs
2 ripe bananas
3 Tbsp maple syrup or honey if not vegan
3 Tbsp unsweetened vanilla or plain almond milk
1 tsp pure vanilla extract
1 tsp baking powder
1 cup almond meal (ground from raw almonds)
1/2 cup + 2 Tbsp oat flour (ground from GF oats) I tweaked the recipe called for possibly using a agave syrup. I never use this as it is just as bad as using corn syrup.

1/2 cup water
2 Tablespoons fresh parsley, chopped
2 Tablespoons green onions, chopped
1/2 teaspoon sea salt
3 cloves garlic (or 1 1/2 tsp. garlic powder)
1 teaspoon Nama Shoyu or Tamari
2 Tablespoons fresh lemon juice
2 Tablespoons raw Apple Cider Vinegar. Directions:
