Add a side of mashed or roasted potatoes and a robust lightly dressed green salad! #ComfortFood Mushroom Gravy Recipe
INGREDIENTS:
3-4 Cups Water w/bullion OR
Vegetable Broth
1 Medium Red Onion, chopped
2-5 Garlic Cloves, chopped
4-6 (3-4in medium)
Portobello Mushrooms, Minced
1-2 TBLS Dried herb blend OR thyme, oregano and basil (1 tsp of each)
3 TBLS Nutritional Yeast
1-2 TBLS (nonGMO) Organic
Corn Starch, Add 1-2 TBLS Water blend to a thin consistency
Himalayan or Celtic Sea Salt and Ground black Pepper to taste DIRECTIONS:
For the broth. In a medium pan bring to a boil the 3-4 cups of water and add bullion. Stir and turn off and set aside. If you are using pre-made vegetable broth heat to boil.
While water/broth is boiling. Sauté the onion and garlic on medium high for about 7 minutes or translucent
Add chopped mushrooms to sauté and continue cooking
Add herbs mix together
Once the mushrooms have cooked add the vegetable broth and bring to a simmer.
Mix in with whisk nutritional yeast
Slowly whisk in the cornstarch.
So no lumps occur
Paying attention as this will thicken the gravy quickly.
Add Sea Salt and
Ground Pepper to taste!

Gravy is ON!!!! This gravy is very forgiving and you can add different herbs or less or more garlic to suit your taste. Or use other mushrooms in larger pieces. If you want it extra creamy add to blender or use an immersion blender.
Yields 3 Cups
Great over polenta too! IN-JOY

#Millet is an ancient seed, originally from Africa and northern China.
Rich in:
Iron
B vitamins
Calcium

Basic recipe:
Yields 3 1/2 cups
Ingredients
1 cup raw millet
2 cups water (or broth)
¼ teaspoon sea salt

Equipment:
2-quart saucepan with lid
Stirring spoon
Measuring cup and spoons

or Rice Cooker
Instructions for stove top:
Toast raw millet in a large, dry saucepan, over medium heat for 4-5 minutes or until it turns a rich golden brown and the grains become fragrant. Take care not to let them burn by stirring.
Add the water & salt, stir turn heat up & bring to a boil

Lower the heat to simmer cover and simmer approximately 15 minutes

Once most of the water is absorbed. Avoid the lifting the lid a great deal or stirring too much (unless its sticking to the bottom). Stirring too vigorously will break up the grains and change the texture.

Remove from heat and let stand to fully absorb the liquid. Allow it to sit, covered and remove from heat, for 10 minutes.

Fluff and Serve! Great side dish or main course. Add to salads, veggie burger or for breakfast. * Millet does not keep well in refrigerator.
