Goat Cheese Stuffed #Portobello Mushroom Caps

Ingredients
-
4 Portobello mushroom caps
2 oz gluten-free oats
1/2 green pepper, diced
2 cloves garlic pressed or minced (pressed is better)
140g meat
1 tbsp grass-fed butter
1-2 tbsp olive oil
2 oz peppercorn goat milk cheese
Himalayan Salt and pepper to taste

Directions

Preheat oven to 425 degrees or BBQ on medium high heat (BBQ is MUCH better).
Remove stems and fins from mushroom caps (check out this video to see how). Brush lightly with olive oil until fully covered.
Blend oats in a blender until a fine dust.
Heat butter on frying pan. Add blended oats, pressed or minced garlic, Himalayan Salt and Pepper. Fry until all lightly browned. Set aside.
Cook meat and green peppers until browned.
Add oats, garlic, meat and green pepper to food processor and process until mixed well.
Add processed mix to the inside of the mushroom caps. Cover with goat’s cheese and bake on grill or rack for 10-15 minutes.
Serve and enjoy!

Paleo Boneless Buffalo Chicken Wings

Ingredients
1/4 cup Shredded Coconut
1oz egg whites
1/4 tsp Black Pepper
2 boneless skinless chicken breasts cut into cubes
Paleo Buffalo Wing Sauce* (Recipe below)

Directions
Put shredded coconut, egg whites and black pepper into a medium to large sized Ziploc bag or tupperware container and add chicken.
Shake well, ensuring all of the chicken is covered in the breading.
Bake for 35 minutes on 375 degrees
Let cool and put in a different tupperware container.
Add wing sauce, close container and shake until the sauce is distributed evenly and enjoy!

*Paleo Buffalo Sauce -
Ingredients
2/3 cup Frank’s Red Hot Sauce
1/4 tsp Cayenne Pepper
1/8 tsp Garlic Powder
Pinch Himalayan Salt
1/2 cup Grass-fed Butter
1 1/2 tbsp White Vinegar
1/4tsp Worcestershire sauce

Directions
Combine the hot sauce, butter, vinegar, Worcestershire sauce, cayenne pepper, garlic powder, and salt in a pot and place over medium heat.
Bring to a simmer while stirring with a whisk.
As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk, and set aside for use.

Chocolate Black Bean #Brownies

Ingredients
1 Can Black Beans (540 mL – Rinsed and Drained)
1 Egg
1/4 Cup Egg whites (or 3 Eggs in total)
1/3 Cup Pumpkin Puree (or unsweetened apple sauce)
1/2 Cup Natural Cocoa Powder
1/4 Tsp Himalayan Salt
2 Tsp Vanilla Extract
2 Tsp Stevia 1 Tsp Baking Powder
1/4 Cup Dark Chocolate Chips

Directions
Pre-heat your oven to 350 F.
Place all black bean brownie ingredients into your food processor and blend until smooth.
Spray an 8×8 baking dish with a healthy, non-stick cooking spray.
Evenly spread batter into baking dish.
Place in the oven and bake for 25-30 minutes*.
Remove from oven when baked and let set in the baking dish for about 10 minutes.
Gently cut brownies, serve and enjoy!
To store brownies it is best to first let them cool completely and then store them in a sealed tight container in the refrigerator.

Ovens vary so your discretion is needed. You will know your brownies are baked when the top becomes firm and the brownies pull away from the sides of the dish. Sticking a tooth pick in the middle and pulling it out clean will ensure your brownies are baked fully.
