melbourneepicure { lemon blueberry muffins }

Makes 12 large or 18 medium

Ingredients
3/4 cup sugar
125 g melted butter
300g sour cream or yoghurt
2 eggs
¾ cup milk
zest and juice of one lemon
2½ cups plain flour
2 tsp baking powder
1 tsp baking soda
1 cup frozen blueberries

Method
Preheat the oven to 350F/180C. Prepare tins with muffin papers.
In a large bowl mix sugar and melted butter until combined. Add sour cream, eggs, milk and zest and juice of lemon. Mix until no lumps.
Add flour, baking powder, baking soda and mix until just combined. Carefully fold in blueberries.
Spoon into prepared muffins tins, bake at 350F/180C for 20-25 minutes until lightly golden and tested with a skewer.

melbourneepicure { thank You } for your messages and checking up to see if he's better, sorry I haven't been able to reply to you all personally. We've had a horrible week with everyone getting sick. Mama power has saved me from getting sick for now (fingers crossed). Little guy hasn't eaten in a week, only wants milk, he's not his smiley self but he sends you all a big hug. It's some kind of bug and the hospital is going to test to see what it is. Thank you again for the love, this mama is emotionally exhausted x 3w

melbourneepicure { helpless } feeling helpless with a very sick little boy who had an ambulance ride to hospital after a high temperature and a febrile convulsion (seizure). Quite often you get frights as a parent but watching him go through that I lost my composure, I panicked, I got scared, I felt helpless, I wanted to cry.
He is still sick but OK. I keep checking up on him, making sure he is breathing, touching his chest to feel his breath, giving him kisses, making sure he doesn't get so hot again.

  •   themisadventurousmaker So scary! My eldest had a febrile convulsion when he was 2.5. Scariest parenting moment. They look like they're slipping away from you permanently in the moment because it's all so full on but thankfully febrile convulsions are usually not serious at all (in terms of the brains but totally scary and often nasty illnesses underlying). melbourneepicure { vanilla cupcakes } (makes about 16)
Ingredients
1 cup sugar
2 tablespoons vanilla extract
65g butter, softened
2 eggs
1/3 cup sour cream
1/4 cup vegetable oil
1 - 1/2 cups plain flour
1/2 cup cornflour
1 - 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup milk, room temperature
Method
Preheat oven to 170C . Place cupcake papers in cupcake pans and set aside.
Combine sugar and vanilla in the bowl of an electric mixer. Mix to combine then add butter, eggs, sour cream and oil and mix until well combined.
In a small bowl sift flour, cornflour, baking powder and baking soda together, fold into your wet ingredients along with the milk.
Fill your cupcake papers 2/3 full. Bake for 16 minutes or until a skewer comes out clean.

  •   kkk_katie68 I'm not worried at all lovely! I am fairly vegie myself (just meat eating men in my house ). She has sound reasons to go vego and is finding it easy as she has always eaten a massive range of foods. The only people who are finding it hard are her friends parents that fear they can't feed her! She laughs and says for them to just make a big bowl of salad! I tried your rolls (took your advice and added the grated veg, plus had a little bit of feta leftover so added that too) BIG hit with all of us!! Now on our menu list permanently.
