  •   jv_cuasito @dickycabron yeah but when making a stock you boil it first then you simmer for a few hours and miso will definitely burn then. Japanese miso soup is fish broth then you add miso last minute and dilute it in the simmer 2w
  •   dickycabron So you're correcting a famous chef in Marcus Samuelson... A broth of any kind doesn't need to be brought to a boil if it's on a constant simmer for a while, which is why miso is okay in this case... He obviously knows what he's doing or he wouldn't be a known chef... @jv_cuasito 2w
