maameemoomoo Just in time for tea break! The man loves rustic bread with cubed cheese sold in Japanese bakeries so here I am, attempting this bread using sourdough for the first time. 😇 .

I've been procrastinating because I find cubing cheeses from blocks a hassle. An additional work load for me, you know.. Yeah, I'm lazy that way!

maameemoomoo Obligatory crumb shot of the previous whole meal sourdough at 78% hydration, even though there wasn't any salt to strengthen the gluten. .

What's mind boggling is how different the crumbs are between my boule and batard. Boule's crumb is a little tighter.. but batard has so much air pockets!

maameemoomoo Because sourdough needs so much work, I cannot just bake one boule or one batard. I have to bake at least 2kg worth of them at one go to justify the time and effort

maameemoomoo Once more, ReRe took me by surprise, over proofed, AGAIN. They're getting so active that I think I need just 1 hour for final proofing. No more 90 mins! Soft levain bread ~ Rye and multi grain loaved. Perfect for grilled cheese sandwich, because some humans in the family have sensitive teeth. 3w

The little one picked the ingredients himself when we went shopping. He knew what cake he wanted from the start, very similar to the cake he was reading about from a book. Thankfully it was nothing fanciful. Done under an hour, phew!

maameemoomoo Imma heel girl. For all my breads, I'd devour the heels selfishly and leave the rest for the boys. Hurhurhur. . Country brown sourdough, 79% hydration. Sadly, my last bake of the year didn't quite make it aesthetically because I overproofed it. I underestimated my new Super ReRe (yeast)! .

The good news is, the bread is so darn good!! With almost 80% hydration, it's not hard to be this delicious.
