maameemoomoo Wanna cry can?!?! I think I seriously should consider getting a baking stone and a pizza peel now that I am baking breads with high % hydration. No more proofing and baking on baking sheets :( Out of 4, 3 are wrecked at the bottom and I was so generous with my flour and polenta today. So so generous 3mon

maameemoomoo 11 weeks since I first started on my sourdough journey, 9 weeks since my first successful country bread, I think I'm ready to move on to other kind of sourdough now. :) . || 80% hydration with 20% wholemeal, 60 hours of cold fermentation, this gotta be my best batch to date.
