  •   love4food Recipe (serves 6): 1,6 kilograms fillet of beef, about 1 tablespoon dijon mustard, 300 grams mushrooms, 16 slices of Serrano ham, enough pastry to cover the meat. 1. Sear the fillet on a hot pan in a tablespoon of butter 2: When all sides of the beef have been seared put aside and brush the beef with the dijon mustard and sprinkle with salt and pepper, set aside to rest. 3: cut the mushrooms into small peaces and fry on a hot pan, set aside. 4: put the slices of Serrano ham on a sheet of plastic wrap, then spread the mushrooms on top, put the fillet of beef ontop of the mushrooms and wrap tight. 5: roll out the pastry and put on plastic wrap 6: remove the plastic wrap from the Serrano beef roll on put on the pastry 7: brush the edges of the pastry with an egg yolk. 8: roll tight and let rest in a fridge for about 1 hour. 8: take the plastic wrap off of the pastry beef roll and put on an oven tray, insert a meat thermometer where the roll is widest 9: put in a 180°C hot oven until core temperature has reached 53°C. 10: take out of the oven and let the Wellington rest for 20-30 minutes before cutting #enjoy 4mon
