lisamcohen Happy Friday! As I mentioned on my blog yesterday, I'm heading out of town (to Charlottesville, VA) this morning for the weekend. That means no baking for me today so I baked this #MySourdoughChallah yesterday. This is my first time making a sourdough challah and I look forward to many more trials. I'd eventually like all of my breads to be naturally leavened. It was fun to compare this loaf to last week's bake. I think everyone in the family preferred the first one but that's not going to stop me from experimenting with #sourdough some more. The crumb wasn't as sweet and was more dense and felt drier, whereas the #MyChallah was fluffy and more moist. I think this would make better French toast than last week's loaf.   •   thelavenderbakery I just braided mine. Making two batches,one following MG's recipe exactly and another with a few changes to the method but otherwise the same. Yours looks good, definitely better braid definition than when I've tried it previously! I find it a tricky recipe but some people make it look fantastic. Have a great trip!!   •   thelavenderbakery It does strengthen the dough quite a lot. I can really see the benefit of it! So much to learn, I think this is a good process for me. Can keep track of what I've done by following recipes and it reminds me I don't know everything... I'm prone to going off on meandering tangents... 4d
  •   forlornscape Looks good, I guess with challah the sourdough version might not be as tasty to some because the dough is already flavored and conditioned with sugar, oil, eggs etc. In plain doughs (flour, water, salt) the SD really takes the place of sugar, oil, eggs, for flavor and texture.   •   thelavenderbakery @forlornscape sd challah definitely takes some adjusting to, it's more challenging as the expectations with challah are so strong and informed by childhood memories of sweet and fluffy bread!! I find sourdough challah more interesting with more depth to the flavour so closer to sourdough with just bread/water/salt than to yeasted challah perhaps. Some yeast challah is very dull and bland despite all the sugar and oil etc so there's still benefit from a slower process even when yeast is the primary leavening method. I think the easiest and tastiest middle ground is a well fermented yeasted challah with sourdough added for flavour...but then there are very good yeast and sd recipes too...I find it hard to enjoy bakery challah now after having more interesting versions for so long.. do you have this book? This particular recipe is available online too which is how I originally made it. Would love to hear your thoughts on it! 4d

lisamcohen I'm so excited that I made bagels!! Oh yeah!!! These were delicious! We just *had* to test one and now we're all looking forward to breakfast tomorrow. Can't wait to hear how yours go, @forlornscape. I baked mine on double-stacked sheet trays lined with silpat for the first batch and they came out great.   •   forlornscape I've baked bagels before from the "Baking with Julia" book. Interesting differences: That dough has sugar, butter and crisco in it. She also shapes the dough into a round and then plunges her thumbs into the middle to stretch it into bagel shapes. It gets an overnight bulk, but goes straight from shaping to boiling, no proofing. 1w

  •   lisamcohen Nope, the didn't stick to one another. They don't rise that much in 6-7 hours. They poof up during boiling so you won't be able to bake as many on the sheet pan as you've proofed. Plan on 2 sheet pans to fit 13 bagels. 1w

So instead of telling you what to do (she assumes you know or have a book to work from) she helps you understand your own resistance.
