lillegs80 BANANA MATCHA MUFFINS
(Not very sweet, would add about 8-10 dates for extra sweetness)
Preheat oven to 180C (fan forced)
Makes 12

DRY
1 1/2 cup oats (process into flour)
1/4 cup almond meal
2 tsp bicarb
2 tsp @matcha_maiden mix n matcha

WET
2 ripe bananas
2 free range eggs
2 tbsp maple syrup
1 tsp vanilla extract
1/4 cup macadamia nut oil

In a bowl mix dry ingredients.
In a food processor add all wet ingredients and process until well mixed. Add wet mix to the dry mix and stir until just combined.
Spoon into muffin cases and bake for 20-25 mins until skewer comes out clean. Enjoy!

When I'm in a hurry for my roast veg I large dice it, part cook them in the microwave for 5ish mins then roast them for 25mins on 200C fan force as I like my edges a lil crispy.

lillegs80 MATCHA LATTE | tried out the Macadamia Milk I received in my GoodnessMeBox this month. I usually use Vitasoy Rice Milk. To be honest I prefer the Rice Milk, goes better with the Matcha. Going to have a look into why they would put vegetable gum in Macadamia Milk, this kinda wierds me out. Tried it on its own and it definitely has a creamy mouth feel but perhaps that's down to the gum added.

lillegs80 CHEWY CRANOAT NUT BARS
Played around with some ingredients, I like this mix but next time will use less rice malt syrup as I found this way too sweet. Might try with date paste next time.

1 cup oats
1 cup nuts (almonds, maccas, Brazils)
1 cup dried cranberries
1/2 cup coconut (des or shred)
2 tbsp chia
3/4 cup almond meal
3/4 cup rice malt syrup (less next time)
1/4 macadamia nut oil
Mix all together, press into square slice tin and bake at 160c for 20 mins, cool in tin on rack. Slice when completely cool or leave overnight in airtight container in fridge then slice (loads easier).
