lexnger And how that roasted salt and orange crusted duck came out. (See the image before this one to see how it went in)
The duck did sort of a hybrid confit and roast cook. The fat rendered and the salt fell off. The smell is divine and the oranges are incredible. I poured off the fat, dumped out the salt and am just attempting to crisp up the skin.
The liquid separating from the fat is a rich, deep, and salty duck sauce with orange and thyme.

In going to let it cool before we taste it, mainly because I need to be somewhere else right now!
Do not break in and eat my duck!
