leila_corvina Today's afternoon walk was in Ritan Park--the same park as the past Sunday. It's a15-minute walk from my workplace. Worth the extra effort because this park is just so beautiful and interesting. This time, I went to another part of the park. Beautiful Beijing weather and low pollution level still holding up! leila_corvina #picstDana had dinner out with friends tonight so I had dinner by my lonesome. Not an excuse to not cook good, wholesome food! It's been over a year since I last cooked spinach patties so I made some tonight but made it a bit different. I added chickpeas and cumin and used rice flour to make it gluten free! And I baked them instead of frying them for a healthier version. I made some cucumber dill yogurt sauce/dip for it and sliced the leftover cucumber for crudités. With sweet potato, it was quite a satisfying meal. And no, I did not eat all of it. I saved some for lunch at work tomorrow.
How I made the spinach patties:

Blanch or steam spinach until just wilted. Cool and squeeze to remove excess water.
In a food processor, mince the spinach, garlic, onion, white pepper, chickpeas, cumin powder, salt, and freshly ground black pepper. Make sure they're mixed well. Add egg and rice flour. I also added some olive oil but I think you can omit it and then use only egg whites and the rice flour (to bind the ingredients) if you want a fat free version.
Mix thoroughly and form into patties. Bake at around 175 C 15-20 minutes or until firm and has a somewhat golden hue.
I didn't really measure so I'd have to say just use your instinct as to how much to use when adding and mixing in the spices. My trick is I smell the mixture and if it smells like the way I think it should taste (in my mind), then it's good.
Cucumber Dill Yogurt Sauce:

Squeeze the juice of a lemon into a bowl. Add a cup of low fat natural yogurt (I used up the small tub--cup?-- of Paul's low fat natural yogurt). Season with salt and pepper.
Roughly chop some dill leaves and chives. Mix them into the yogurt.
Half a cucumber lengthwise. Scoop out the seeds and soft part in the middle. Roughly chop and add to yogurt. Mix everything well. Tadah!

leila_corvina Tonight's dinner was special for our household. It marks the first time I cooked curry from scratch! Tonight's menu: Saffron Rice and Cauliflower and Chickpea Curry. Saffron Rice Recipes in my previous post. Curry recipe inspired by the recipe in the app, Jamie Oliver's Recipes. For the curry, I used dried chickpeas which I soaked and cooked beforehand. I also tweaked the amount of spices to suit our taste preference but we still didn't find it spicy enough so we sprinkled cayenne pepper on it just before eating. And I made sure there was lots of sauce because Dana and I love curry sauce! What a satisfying and heavenly meal! It's especially healthy because of all those spices used that are chockfull of healthy goodness--coriander seeds, cumin seeds, ground turmeric, red chillies, black mustard seeds, ginger, garlic, cilantro.
