jostella30 This was my dinner tonight - after a crazy day and not being able to get to the gym for my LISS training till 9:20pm, I had very little time to cook din dins, hence resorted to a super-quick sweet potato mash with some chopped up yellow pepper with coriander and lemon juice. It really was delicious and I loved the vibrant colours on my plate.
