  •   mitcho So what's the trick to the pretty poached egg? 2mon
  •   johnpbloch @mitcho didn't know there was a trick. I just pulled them out with a spoon with little holes in it. 2mon
  •   mitcho @johnpbloch dropping them in water? It's possible there is no trick. I'm just bad at it. 2mon
  •   johnpbloch @mitcho my method (in case I just got lucky and found an easy way) is: 1. Bring ~3" deep water in saucepan to boil. For 2 eggs, a 6" pan is fine, but any more and you'll want a bigger pot (10-12"). 2. Reduce to medium high. You still want a boil, but not so vigorous. 3. Crack an egg into a ramekin. You'll do this one at a time. 4. With a spoon in one hand and the ramekin in the other, start swirling the water into a whirlpool. I don't think direction matters, but I do counter-clockwise (could be because I'm left-handed, though). 5. When you have a pretty deep whirlpool in the middle of the saucepan, pull the spoon out and immediately gently pour the egg into the center. 6. Use a slotted spoon to pull it out when it's cooked to your liking (a minute or two for me). You can keep adding more eggs while there are eggs still cooking, just be careful not to smash them while making the whirlpool. 2mon
