jingtheory Got a master class tonight in one of the hardest and most wonderous flavor combinations to master in Sichuan cuisine, 'Strange Flavor' 怪味 fava beans, one of my favorite things to snack on. Slowly caramelized sugar, with sweet bean paste, miso (Yubo's own innovation), chili, huajiao, and salt. Sounds easy, but extremely difficult to master. Can be applied to anything crunchy and/or fried, walnuts, peanuts, cashews, etc. The result is so, so delicious. 2w
