j_vespa My world is currently revolving around bowls of random, nutritious concoctions. This one featuring brown rice, massaged kale salad, roasted Brussels, sautéed mushrooms, BBQ-rubbed chicken and topped off with coconut-Sriracha sauce and cilantro. The sauce is simply 1/2 cup lite coconut milk mixed with 2 tbsp Sriracha. Add more based on your desired level of heatso delicious on fish, burgers and salads, too!
BBQ chicken rub: 1 tbsp brown sugar, 1 tsp chili powder, 1/2 tsp cayenne pepper, 1/2 tsp garlic salt, 1/2 tsp smoked paprika and 1/4 tsp cumin. Makes enough to season ~1 lb of meat

Dice 1 shallot and 2 cloves of garlic and sauté in EVOO for 3-4 mins. Add 1 cup of mashed sweet potato (amounts to ~1 whole sweet potato without skin), 1/4 cup chicken broth, 2-3 fresh chopped sage leaves and 1/2 cup previously frozen chopped spinach (heat in the micro and ring out extra water with paper towels). Mix to combine and cook for 3-5 minutes. Stuff 12 baby bella mushroom caps with filling. Top with grated cheese. Bake at 350F for 22 mins. Drizzle with balsamic reduction and serve!

j_vespa Breakfast-stuffed sweet potato. Just trust me on this one. Roast sweet potato in foil at 500F for 1 hour - this literally makes the skins caramelize and the inside morph into a pillowy cloud. Slice & stuff with breakfast noms of choice. I used turkey bacon, 1 egg + 2 egg whites, roasted red pepper, sautéed shallots, chives and Sriracha. Dooo it! 1w

j_vespa Vanilla Almond Bars for the perfect dessert, breakfast or midday pick-me-up. Best when topped with almond butter... But what isn't?
Recipe: combine 1 cup almond flour, 1/4 cup coconut flour, 1 scoop @pescience Blondie protein (or sub vanilla), 2 tbsp sugar or sugar substitute of choice (I used coconut palm sugar), 1 tsp baking powder, pinch of salt. In a separate bowl, whisk 1 egg, 2 egg whites, 1.5 tsp vanilla extract and 1/2 cup almond milk (or milk of choice). Combine wet into dry ingredients. Fold in 1/4 cup crushed unsalted almonds (I used coconut flavored). Bake in 8X8 pan at 350F for 16-18 mins.

Pancakes: mix 3 tbsp @pescience Snickerdoodle select protein, 3 tbsp oat flour, 1 tbsp coconut flour, 1/3 cup egg whites, 1/3 cup unsweetened vanilla almond milk. Bananas are cooked stove-top in coconut oil with a pinch of sea salt. Enjoy!

j_vespa Chicken and veggie stir-fry in a spicy peanut butter sauce. My breakfasts know no limits.
Recipe: cook 1 cup brown rice in low sodium chicken stock. In a large skillet, sauté chopped veggies of choice (I used broccoli, green beans, red pepper, carrots, onions and garlic). Add diced chicken to skillet (I used ~1 lb seasoned with salt, pepper and ground ginger). Once chicken is almost cooked, add 1 cup chicken broth, 3 tbsp soy sauce, 2 tbsp honey & 3 tbsp @peanutbutterco The Heat Is On peanut butter (or plain PB + Sriracha). Bring to a boil, reduce heat to low and let simmer 10 mins. Add cooked rice to skillet and simmer for an additional 5 mins. Top with cilantro. Face plant.

Recipe: mix 1 scoop @pescience Blondie Select protein with 1 tbsp coconut flour, 3 tbsp oat flour, 1/3 cup liquid egg whites, 1/3 cup unsweetened almond milk. Batter will be thick but this leads to optimal fluffiness
Toppings: Jif Whips chocolate peanut butter, crushed hazelnuts, cacao nibs and protein powder water mixed with enough water to form a drizzle.

j_vespa One of my favorite, simple side dishes! Roasted tri-color carrots with a sweet tahini drizzle and herbs.
Tahini drizzle: 2 tbsp tahini, 2 tbsp water, 1 tsp maple syrup and a squeeze of fresh lemon juice. Roast carrots at 350F for 45 mins and finish them off by broiling on high for 2-3 mins

j_vespa Waffle breakfast sandwich made with the new @pescience Blondie Select Protein. I don't know how they do it, but the blondie flavor is SO on point!I can't wait to start baking up a storm with this tub of goodness.
Waffles: 1/2 scoop Blondie protein powder, 3 tbsp oat flour, 1 tbsp coconut flour, 1/3 cup milk (I used unsweetened almond milk), 1/2 cup liquid egg whites. Use in waffle maker or as pancake mix.

Kale slaw: in a large skillet, sauté 2 large handfuls of kale with 1 cup coleslaw salad mix, 1/4 sliced yellow onion, 1 clove of garlic, 1 tbsp EVOO and 2 tbsp balsamic vinegar for 7-8 minutes until soft/wilted.
