j_vespa Taking the edge off Monday with Strawberry Cream filled Banana Protein Pancakes
Mix 1 scoop protein powder (I used @pescience Snickerdoodle) with 1.5 tbsp coconut flour, 1/2 mashed banana, 1/3 cup liquid egg whites and 1/4 cup unsweetened vanilla almond milk. Form into one large pancake on a heated skillet and cook evenly on both sides. For the cream filling, blend 1/3 cup 0% fat plain or vanilla Greek yogurt with fresh strawberries and stevia to taste. Spread strawberry cream evenly on pancake, roll up, slice into pieces and top with remaining cream.

j_vespa French toast topped with strawberry balsamic compote and honey goat cheese it's like eating strawberry cheesecake for only a smidge of the calories and fat. Totally in heaven.
For the compote, sauté 1/2 cup diced strawberries in 1 tsp coconut oil over medium heat. Add ~1/3 cup balsamic vinegar, bring to boil and then reduce heat to low. Let simmer for 5-7 minutes until sauce thickens. Great to use as an alternative to syrup on pancakes or waffles, too!
