j_vespa Delicious start to the day featuring Greek yogurt protein pancakes topped with fruit and a little dark chocolate drizzle️ Pancakes: mix 1 scoop @pescience Snickerdoodle protein (or protein powder of choice) with 3 tbsp oat flour, 2 tbsp coconut flour, 2 tbsp Greek yogurt, 1/3 cup liquid egg whites and 1/3 cup milk of choice. Add an additional 1-2 tbsp of milk if the batter is too thick. Cook on skillet ~3 mins per side.
Chocolate drizzle: Heat 1-2 tbsp dark chocolate chips with a ~1 tsp coconut oil in the microwave for 30 seconds until melted. Mix to combine and drizzle on pancakes and in-and-around mouth region. Enjoy!

Oats: Heat 1/2 old fashioned oats stove-top with 1/2 cup water, 1/2 cup almond milk. Once oats start boiling, turn heat to low, add in 2 tbsp PB2, 2 tbsp protein powder of choice and another splash of milk. Stir to combine, remove from heat. Top with berry of choice and toppings galore

j_vespa The official "party in your mouth" burger: southwest turkey burgers with roasted peppers, spinach, avocado, spicy chipotle spread and crushed sweet potato chips on whole-wheat buns. My ideal dose of spice, crunch and sweetness all with nutritious ingredients
Burgers: mix 1lb lean ground turkey with 1/4 cup corn, 1/4 cup jarred roasted red peppers (chopped), 2 tbsp fresh chopped cilantro, 1 tbsp southwest chipotle seasoning (Mrs.Dash), 1-2 tbsp spicy chipotle pepper spread (Hidden Valley) and a dash of salt and pepper. Form into 6 patties and cook on a non-stick skillet until well done

Grilled corn tortillas are topped with blackened Mahi fillets, baby spinach, avocado, roasted chipotle salsa, cilantro and a salsa verde crema (simply mix 2% plain Greek yogurt with salsa verde). So delicious!

Triple Berry Protein Waffles topped with fat-free Cool Whip, mixed berries, slivered almonds and agave
Mix 1/3 cup oat flour, 2 tbsp protein powder of choice (I used @pescience Snickerdoodle protein), 2 tbsp coconut flour, 1/3 cup egg whites, 1/3 cup almond milk and 1/4 cup previously frozen/thawed mixed berries. Pour in waffle maker or make into pancakes and top with noms of choice

j_vespa Light and colorful Spring dinner of Bourbon Molasses Mustard salmon, roasted tri-color carrots with tahini drizzle, and a zucchini medley of corn, roasted red peppers, garlic and Parmesan.
Tahini drizzle is 1 tbsp tahini mixed with juice of 1/2 lemon, 1 tsp honey, a dash of salt and enough water to thin it out.

j_vespa Chili-spiced salmon burgers with Dijon dill yogurt spread. Light, simple and delicious!
Salmon is seasoned with chili powder, smoked paprika, cayenne, garlic powder and sea salt and broiled on high for 6 minutes. This is my favorite way of cooking salmon - gets the outside crispy and the inside soft and flaky
The Dijon yogurt spread is 3 tbsp 0% fat plain Greek yogurt mixed with 1 tbsp Dijon mustard, 1 tbsp chopped fresh dill, juice from 1/2 lemon, 1 tsp Truvia and a dash of sea salt. Dooo it
