j_vespa Taking the edge off Monday with Strawberry Cream filled Banana Protein Pancakes
Mix 1 scoop protein powder (I used @pescience Snickerdoodle) with 1.5 tbsp coconut flour, 1/2 mashed banana, 1/3 cup liquid egg whites and 1/4 cup unsweetened vanilla almond milk. Form into one large pancake on a heated skillet and cook evenly on both sides. For the cream filling, blend 1/3 cup 0% fat plain or vanilla Greek yogurt with fresh strawberries and stevia to taste. Spread strawberry cream evenly on pancake, roll up, slice into pieces and top with remaining cream.

j_vespa French toast topped with strawberry balsamic compote and honey goat cheese it's like eating strawberry cheesecake for only a smidge of the calories and fat. Totally in heaven.
For the compote, sauté 1/2 cup diced strawberries in 1 tsp coconut oil over medium heat. Add ~1/3 cup balsamic vinegar, bring to boil and then reduce heat to low. Let simmer for 5-7 minutes until sauce thickens. Great to use as an alternative to syrup on pancakes or waffles, too!

Into food processor, add 1 can of drained and rinsed chick-peas, 2 tbsp tahini, 3 tbsp extra virgin olive oil, juice and zest of half a lemon, 3-4 fresh basil leaves and sea salt. Process until puréed.

j_vespa Warming up this morning with Peanut Butter Cookie Baked Oatmeal. It's like digging in to a pillowy cloud of soft peanut butter goodness!!
Mix 1/2 cup old fashioned oats, 3/4 cup unsweetened almond milk, 1 tsp vanilla extract, 2 tbsp PB2, 1 egg white, 2 tbsp protein powder (I used @pescience Snickerdoodle of course), sweetener of choice and 1/8 tsp baking powder. Pour into a greased ramekin and bake at 350F for ~27 mins. Top with more peanut butter and dig in!

j_vespa Teriyaki Beef Rice Noodle Bowls for take-out style Thai at home if you haven't experimented with brown rice noodles, they're a great, healthful alternative to ordinary pasta and cook in less than 4 minutes! Double win.
Teriyaki sauce: mix 3 tbsp rice vinegar, 2 tbsp reduced sodium soy sauce, 1.5 tbsp Sriracha, 1 tbsp sesame oil, 1 tbsp coconut sugar, 1 tsp ginger and minced garlic. Coat cooked veggies, meat and noodles with sauce, top with fresh mint and sesame seeds and dive in!

j_vespa It's Monday - you need these guilt-free peanut butter chocolate donuts!
Mix 1/3 cup protein powder of choice (I used @pescience Select Protein in Blondie), 1/4 cup coconut flour, 2 tbsp PB2, 3 tbsp whole-wheat flour (sub for oat flour or white), 1 tbsp stevia, 1 egg, 1 egg white, 1/2 cup milk (I used unsweetened almond milk), 1/2 tsp baking powder. Fill in greased donut pan. Bake for 8 minutes. Top with PB2 mixed with enough water to form a paste. Drizzle with dark chocolate sauce (made out of dark chocolate chips melted in the microwave with a little coconut oil). Makes 6!

j_vespa Blackberry and balsamic glazed chicken with a sweet potato kale salad topped with spicy peanut sauce.
Season chicken with salt, pepper and cayenne pepper. Let it marinate in a ziplock bag with 1/4 cup balsamic vinegar, 1-2 tbsp blackberry preserves and fresh thyme (I let mine marinate overnight). Pan sear ~5 minutes on each side and finish it off in the oven at 350 until fully cooked. The salad is sautéed kale and shallots tossed with roasted sweet potatoes. Peanut sauce is peanut butter mixed with Sriracha, honey and enough water to thin it out. Enjoy!

j_vespa My world is currently revolving around bowls of random, nutritious concoctions. This one featuring brown rice, massaged kale salad, roasted Brussels, sautéed mushrooms, BBQ-rubbed chicken and topped off with coconut-Sriracha sauce and cilantro. The sauce is simply 1/2 cup lite coconut milk mixed with 2 tbsp Sriracha. Add more based on your desired level of heatso delicious on fish, burgers and salads, too!
BBQ chicken rub: 1 tbsp brown sugar, 1 tsp chili powder, 1/2 tsp cayenne pepper, 1/2 tsp garlic salt, 1/2 tsp smoked paprika and 1/4 tsp cumin. Makes enough to season ~1 lb of meat

j_vespa Sweet potato and spinach stuffed mushrooms topped with Parmesan Reggiano and balsamic reduction. So simple. So yum. So gone.😛
Dice 1 shallot and 2 cloves of garlic and sauté in EVOO for 3-4 mins. Add 1 cup of mashed sweet potato (amounts to ~1 whole sweet potato without skin), 1/4 cup chicken broth, 2-3 fresh chopped sage leaves and 1/2 cup previously frozen chopped spinach (heat in the micro and ring out extra water with paper towels). Mix to combine and cook for 3-5 minutes. Stuff 12 baby bella mushroom caps with filling. Top with grated cheese. Bake at 350F for 22 mins. Drizzle with balsamic reduction and serve!
