eelectriceel A friend asked me for the recipe for my stuffed peppers. I didn't use one, but I wrote one out to share with all of you ️ It is in the comments below. Enjoy! 7mon
  •   eelectriceel Cheesy Stuffed Peppers

    1lb ground beef
    2 cups rice
    4 medium-large peppers (red, orange, or yellow)
    4 medium button mushrooms
    1 cup broccoli
    1 cup cauliflower
    1/2 cup carrots
    About 3/4 of a small tub of Roasted Garlic Philly cream cheese
    Half and half cream
    2 tbsp butter
    1 cup shredded cheese of your choice
    Salt, pepper and any additional seasonings to taste
    Parmesan Breaded Crispy onion pieces (optional, but highly recommended)
    Make rice with vegetable or chicken stock for added flavor.
    In a large skillet, begin to cook and break apart the ground beef over medium heat. Meanwhile cut a hole in each pepper, about 3/4 from the top (I lay them on their side instead of upright.) Scrape out the seeds and white ridges and discard. Dice the cut pepper pieces along with the mushrooms and add to the beef once it is no longer pink. Season with salt and pepper and anything else you like. Worcester sauce is definitely a great addition. Cook until beef is browned then cover and set aside.
    In a medium saucepan, warm the cream cheese, butter and 2 splashes of cream over low heat and cover. Dice the carrots, broccoli and cauliflower (small pieces) and add to cream cheese sauce. Warm through, add a little more cream if needed to thin the sauce. Don't cook the veggies all the way, leave them still crunchy.

    In a large bowl, mix the cooked rice with the ground beef in equal portions and fill each pepper about half way. Pack the mixture firmly. Fill the rest of each pepper with the cream cheese and veggie medley until full to the top. I topped them with crispy onion pieces that I lightly fried with parmesan and bread crumbs, but small croutons or a layer of just breadcrumbs and parma would work too. Sprinkle each pepper with shredded cheese and place on a greased baking sheet. Bake at 375 for 30-35 minutes.
