cuisineparadise Boiling some chicken soup with kampong chicken, lotus seeds and white fungus for tonight to nourish our body as well as get the boy ready for coming exam.
莲子鸡汤有养心安神、补脾益肾的清热泻火之功能,它还有显著的强心作用,能扩张外周血管,降低血压,并有助于睡眠等等。

Benefit of lotus seeds:
- In TCM point of view lotus seeds can nourish heart and calm the nerves which in a way prevent insomnia; diarrhea caused by spleen deficiency as well as urinary disorders. ----------------------------------------------
Ingredients:
- half portion kampong chicken
- 50g lotus seeds
- handful of white fungus
- some red dates
- 1 tablespoon wolfberries
- 1 bottle of Brands Chicken Essence

Method:
1. Soak the lotus seeds (do not rinse) and white fungus separately in warm water till soften.
2. Bring a pot of water to boil, blanch lotus seeds and white fungus for 2 minutes to remove the "raw taste". Rinse and set aside.
3. Using the same pot of water blanch chicken, rinse and set aside.
4. In a soup pot bring 1.2L of water to boil, add in lotus seeds, white fungus, red dates and chicken.
5. When the mixture comes to boil, lower heat and simmer for at least 30 minutes.
6. Before serving add in wolfberry (枸杞子) and a bottle of chicken essence to perfect the taste. =================================

cuisineparadise [#instavideo] Days when you are craving for Thai food, why not grab a pack of #dancingchef Green Curry Paste, chicken breast, egg plant, Thai basil and etc to try this ready in 20 minutes Thai Green Chicken Curry! ----------------------------------------------------
Ingredients:
1 packet dancing chef green curry paste
1 skinless chicken breast, cut into strips
4 small egg plant, cut into thick slices
65-100ml coconut milk
150ml hot water
1/2 teaspoon sugar
3 Kaffir lime leaves
Handful of Thai Basil
2 red chilli, sliced
Some cherry tomato, optional
Method:
1. Sauté egg plant with some oil for 1 minute, remove and set aside.
2. With the same pot, add in green curry paste and chicken then stir on low heat a minute or so till the meat changed colour. Add in egg plant, kaffir lime leaves and chilli.
3. Give the mixture a quick stir, add in hot water and sugar then bring it to boil. Lower the heat and simmer 5-7 minutes till egg plant soften and meat is cooked.
4. Stir in tomato and coconut milk, simmer for another minute. Turn off the heat and add in basil leave and serve with steamed white rice.

b) seafood such as prawn, fish, squid and clams can be used to replace chicken =================================
