cuisineparadise [26 May 15: Dinner] Tonight we are having another one pot dish with lemon, chicken and mushroom. Very surprise with the end result because it taste quite similar to Thai dish with sourish, spicy and garlicky flavour 开胃的下饭菜.

Ingredients:
half portion of chicken, cute into chunk
1 large lemon
3 stalks of coriander leaves, roughly chop
6 swiss brown mushrooms, halved
1 bird eyes chilli, sliced
5 cloves garlic, minced
50ml hot water

Method:
1. Marinate chicken with 1 tablespoon cooking wine and cornflour for 10 minutes.
2. Preheat casserole pot/frying pan with 1 tablespoon oil and sauté chicken till slightly browned on both side.
3. Add in garlic, give mixture a quick stir till fragrant. Toss in mushroom, rind and juice of 1 lemon, water, coriander and chilli.
4. Simmer on low heat for 10 minutes or until chicken is cooked through.

cuisineparadise [25 May 15: Dinner] Chicken & Mushroom Chow Mein using Asian egg noodle, chicken fillet and shiitake mushroom! Fuss free one-pot dinner. ---------------------------
Ingredients:
2 Pieces of Dried Egg Noodles (鸡蛋面)
5 Fresh Shittake Mushroom, sliced
4 Chicken Fillet, sliced
2 Large Egg. beaten
1 Medium Brown Onion, halved and thinly sliced
3 Cloves Garlic, minced
3 Stalks Spring Onion, cut into 3" sections
1 Tablespoon Oyster Sauce
1/2 Teaspoon Dark Soy Sauce

Method:
1. Blanched egg noodle in boiling water for about 2 minutes. Remove and rinse with water, drain well and set aside.
2. Swirl 1 tablespoon of cooking oil in frying pan, fry omelette till lightly brown on each side, remove and set aside to cool before slicing.
3. With the same pan, add ½ tablespoon of oil saute brown onion, spring onion (bottom white portion) and garlic till fragrant before adding marinated chicken fillet (marinate it with some light soy sauce, cooking wine, sesame oil and cornflour) and cook till almost done. Stir in mushroom and oyster sauce and continue to cook for another 1 minute.
4. Stir in prepared noodles; splash in 50ml hot water, dark soy sauce and give it a few good stirs to combine with the ingredients.
5. Lastly toss in spring onion and omelette and serve immediately.
