crysp Did you know know there was a difference between "CocOA" and "CacAO"? Yep there totally is and for a long time I've was a bit confused about the difference in the spelling and wondered what if any difference there actually was between the two.
So heres the deal... Even though CocOA and CacAO come from the same bean there is a fairly big difference between the two and how they are processed.
Basically one is the Raw version of the other.... CacAO is Raw and CocOA is Roasted.
CacAO (pronounced: kuh-KOW) is the purest and rawest form of a cocoa bean.
Cacao is not roasted. CacAO is made from removing the cacAO beans from their pods (which grow on cacAO trees), and then fermenting them. (And fermentation is a wonderful thing)

The beans are then cold-pressed to remove the cocao butter or fat from the beans and then dried.
Cacao powder does look almost exactly the same as cocoa powder, but none of the nutrients, antioxidants, and enzymes have been cooked out, therefor the overall nutrition of the cocoa bean remains intact in Cacao powder.
CocOA takes it a step further – it gets roasted at really high temperatures. Keep in mind heating any plants kills a lot of living enzymes (ie. minerals/vitamins/healthy stuff) in the plants, just think about what an over cooked broccoli looks like when it's been steamed way too long..... This means that cocOA has much less of a nutritional value than the raw cacAO stuff does.

Of course CacAO is the healthier and therefor more expensive choice but just like anything else once you understand the value in paying a little bit more and getting a better product it becomes a no brainer to choose the nutrient dense option! Right? Right!

crysp Guacamole Chicken Fajitas for dinner tonight.
@gordp and Asher are off to #taekwondo so it had to be something quick but still healthy. Chicken fajitas had them filled up and out the door in time. 🏻 But the littlest one was acting pretty tired so after dinner we did 🛁😬🛌!
(Can you decipher my emoji speak?) And he went right to sleep with out toooo much fuss!
Now to clean up and head to kickboxing! 🏼

crysp We started re-sleep training Fraser this week. After multiple hospital visits, asthma, pneumonia, colds and vacation he has really gotten off track. Needing to hold mommys hand to fall asleep, waking in the night etc. Not great. And I know I've become his sleep prop, he falls asleep holding my hand and when he wakes up he needs me to fall back asleep. Time to get things back to normal and have everyone sleeping through the night again. Coffee is our friend this week!

I blended up this Cherry Berry Spinach Smoothie using frozen organic berry blend, spinach, water and Vanilla Shakeology.

Handful of spinach
Water to cover berries
1 scoop vanilla Shakeology

crysp So thankful to have a success partner this morning. I set my alarm to wake up at 5:30 so I could make some progress on my goals before the house woke up but it's not always easy. Fraser had a temp in the middle of the night so I was up from 3:30-4am monitoring it as I couldn't fall back asleep until I knew it was going down. Teething??? He isn't sick it's gotta be teeth right?
I was so glad she text me to see if I was up too because it gave me the extra push I needed to get going!

Just combine oats, banana, Greek yogurt, honey, and eggs, in a blender, mix, then pour the batter into a muffin pan and bake. In slightly more time than it takes to make a smoothie, you could have a batch of blueberry muffins baking in your oven.
Blueberry Oatmeal Muffins

Total Time: 40 min.
Prep Time: 15 min.
Cooking Time: 25 min.
Yield: 12 servings, 1 muffin
Ingredients
1 cup plain Greek yogurt
3 Tbsp. raw honey
2 large very ripe bananas, cut into chunks
2 large eggs
½ tsp. pure vanilla extract
2 cups old-fashioned rolled oats
1½ tsp. baking powder
½ tsp. baking soda
½ tsp. sea salt (or Himalayan salt)
2 cups fresh or frozen blueberries
⅔ cup chopped raw walnuts (optional)

Preparation:
1. Preheat oven to 350° F.
2. Prepare 12 muffin cups by lining with muffin papers or lightly coating with coconut oil.
3. Place yogurt, honey, bananas, eggs, extract, oats, baking powder, baking soda, and salt in blender (or food processor); cover. Blend until smooth, scraping once or twice, as needed.
4. Gently fold in blueberries and walnuts.
5. Evenly divide batter among prepared muffin cups.
6. Bake 20 to 25 minutes, or until tester inserted into the center comes out clean.
