Avocado Lime Goat Cheese Dip

Ingredients
• 2 large ripe avocados
• 4oz goat cheese, room temperature
• ½ cup low-fat Greek yogurt
• ¼ cup fresh lime juice
• 1 garlic clove
• ½ teaspoon kosher salt
• ¼ teaspoon black pepper
• ¼ teaspoon cumin powder
• ⅛ teaspoon cayenne pepper

Instructions
1. In the bowl of your food processor place the goat cheese and avocado. Pulse 6-8 times or until the avocado and goat cheese starts to mash up
2. Add the greek yogurt, lime juice, garlic, salt, black pepper, cumin and cayenne pepper
3. Process until the dip is completely smooth, stopping to scrape down the sides once to make sure everything is combined
4. Transfer to a serving bowl, taste and adjust salt and pepper as necessary
5. Serve immediately with a variety of Kettle Chips
6. If making ahead store in an airtight container in the refrigerator with a touch of extra lime juice over the top to prevent any browning

INGREDIENTS
• 6 whole grain bread slices
• 6 slices provolone cheese
• 6-10 slices tomatoes, sliced
• Fresh herbs

DIRECTIONS
Place the 6 slices of bread in a baking tray. Arrange the slices of cheese over the bread followed by the tomato slices
Place the toasts under the broiler of 6-7 minutes. Make sure you look closely after 5 minutes to make sure they don't burn. They turn very quickly
Sprinkle with fresh herbs and pepper flakes if using

PURPLE POWERHOUSE SMOOTHIE

INGREDIENTS
• 1 cup of frozen blueberries
• ½ a large beet or 1small/medium beet [make with the leftovers from this
• 1 ripe banana [fresh or frozen
• ¼-1/2 cup of plain coconut milk
• a handful or so of kale leaves
• a splash of orange juice for sweetness
• optional add-ins & swaps
• green apple, or orange sections for added fruit
• orange juice instead of coconut milk
• spinach instead of kale
• flax or chia seeds for an extra kick of fiber
• ice, if you're using all fresh ingredients

INSTRUCTIONS
1. Get Blending
2. Cook up some beets for a salad or side dish and then set a few slices aside for this smoothie
3. To make this bad boy, toss everything in the blender and let it do the work for you
4. Adjust the liquids and even add ice if needed, it'll just depend on your ratio of frozen ingredients to fresh
5. I always start with the recipe above and then just tweak as needed

creativefoodz Sweet and Spicy Thai Chicken Wings

Ingredients
• 3-4 lbs chicken wings
• ¼ cup honey
• ¼ cup soy sauce
• ⅓ cup Thai Chili Sauce
• juice of ½ lime
• 1 tablespoon Sriracha
• 2 cloves garlic, minced
• 2 tablespoons water
• green onions and chopped cilantro, for topping

Instructions
1. Preheat oven to 400 degrees F
2. Place wings on baking sheet
3. Bake in preheated oven for 20 minutes
4. Meanwhile, make the sauce
5. Combine honey, soy sauce, Thai Chili sauce, lime juice, Sriracha, garlic, and water in saucepan over medium-high heat
6. Bring to a boil, then reduce to a simmer
7. Let simmer for 10 minutes
8. Remove from heat
9. After wings have cooked for 20 minutes, toss with ½ cup of the sauce
10. Bake wings another 10-15 minutes, until they are looking crispy
11. To get them even crispier, turn on broiler for 1-2 minutes, watching carefully
12. Toss with remaining sauce, then top with green onions and cilantro

For the Salad
• 5 oz dry pasta of chice
• 1 cup cherry tomatoes
• 1 cup cucumber
• 1 cup olives
• ½ cup red onion
• 3 oz feta cheese
• 5 Fresh Oregano leafs
For the Dressing
• 1 tsp. ground mustard
• ¼ cup white wine vinegar
• ½ cup olive oil
• ½ tsp. dried oregano
• ½ tsp. salt
• ½ tsp. pepper
• ¼ tsp. dried basil
Method
Cook pasta, wash it and drain
In a bowl, add the salad ingredients and mix well
In a small bowl mix all the dressing ingredients and stir well until it all combines nicely
Pour the Dressing into the salad bowl and refrigerate
To serve – Add some chopped Oregano, Basil, Salt and Pepper

Avocado + Heirloom Tomato Toast with Balsamic Drizzle

Ingredients
• ½ cup balsamic vinegar
• 2-3 slices hearty, seeded bread
• olive oil
• 2 small heirloom tomatoes, thinly sliced
• ½ a ripe avocado
• ¼ cup fresh basil, chopped
• sea salt
• black pepper

Instructions
1. Make the balsamic reduction by adding the balsamic vinegar to a small saucepan over medium-high heat. Bring the balsamic to a boil, whisking constantly. Reduce heat and simmer for 10-15 minutes or until balsamic has reduced by half and is thick enough to coat the back of a spoon. Make sure you keep an eye on it -- it burns quickly
2. Slather each slice of bread with a drizzle of olive oil and toast
3. Evenly divide the avocado between the pieces of toast and use the back of a fork to smash the avocado. Layer the sliced tomatoes on top, sprinkle with fresh basil, and drizzle with the balsamic reduction
4. Garnish with sea salt and black pepper
5. Serve immediately

• 1 c brown sugar packed
• 3/4 c ketchup
• 3/4 c low-sodium soy sauce
• 1/3 c chicken broth

• 24 boneless skinless chicken thighs (about 5 lbs) (This makes a TON – I made half a batch) if you use bone in cook longer till no more pink or temp reads 165f degrees

Instructions
1. In a small bowl, mix the first six ingredients. Reserve 1 1/3 cups for basting; cover and refrigerate. Divide remaining marinade between two large resealable plastic bags. Add 12 chicken thighs to each; seal bags and turn to coat. Refrigerate for 8 hours or overnight
2. Drain and discard marinade from chicken. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack
3. Grill chicken, covered, over medium heat for 6-8 minutes on each side or until no longer pink; baste occasionally with reserved marinade during the last 5 minutes
