100 ml cream fraiche
50 g butter
50 g parmesan

50 g cheddar
50 g mozzarella
salt and pepper

Looks well with: fresh oregano and chives

Instructions

1. Place the 4 types of cheese with sour cream on the pan and start with low heat
2. Mix for 5 minutes to obtain a homogeneous and shiny consistency. Add 2 tablespoons of water every minute
3. Boil frozen broccoli for 3 minutes, then drain the water well
4. Defrost the sheets at room temperature. Place them in a bowl deep enough to make it easy to form a bag. Put broccoli in it, 3 tablespoons of quattro formaggi, salt and pepper. Close the bag by turning sheets and cut the excess to give it a beautiful shape

Avocado + Heirloom Tomato Toast with Balsamic Drizzle

Ingredients
• ½ cup balsamic vinegar
• 2-3 slices hearty, seeded bread
• olive oil
• 2 small heirloom tomatoes, thinly sliced
• ½ a ripe avocado
• ¼ cup fresh basil, chopped
• sea salt
• black pepper

Instructions
1. Make the balsamic reduction by adding the balsamic vinegar to a small saucepan over medium-high heat. Bring the balsamic to a boil, whisking constantly. Reduce heat and simmer for 10-15 minutes or until balsamic has reduced by half and is thick enough to coat the back of a spoon. Make sure you keep an eye on it -- it burns quickly
2. Slather each slice of bread with a drizzle of olive oil and toast

creativefoodz Mediterranean Chicken Meatballs

Ingredients
• 1 pound (16-ounces) ground chicken (or turkey) breast
• 4 cloves garlic, minced
• ½ cup Panko breadcrumbs
• ½ cup crumbled Feta cheese, pasturized (i.e. Athenos
• 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
• ½ cup chopped sundried tomatoes, packed without oil (i.e, Bella Sun Luci or California Sundry
• The zest of one fresh lemon
• 1 egg, beaten
• ¼ teaspoon kosher salt
• ½ teaspoon black pepper pepper
• Canola cooking spray

Instructions
1. Preheat oven to 425 degrees
2. In a medium bowl, combine ground chicken, garlic, panko, Feta, spinach, tomatoes, egg, zest, salt and pepper
3. Roll chicken mixture into 1-inch balls and then place on a foil-lined baking pan coated with cooking spray
4. Spray cooking spray evenly over meatballs
5. Roast in the oven 18 minutes or until golden
