chasqui_482 As a chef I take inspiration everywhere I can....and I have to admit the Arab foods are not my forte. Kibbeh is a new dish I encountered today. Very Arab, very delicious, and with a lot of possible culinary applications. It's really a pie with seasoned ground beef, chopped walnuts, and golden raisins. The "dough" is actually made not from wheat flour but with cracked wheat called bulgur. And it doesn't end there... Ground steak is added to the bulgur to give it a nice "meaty" feel to it. Aderezo, is the foundation to any good dish. It's a combination onions, garlic, and/or Aji. Simple right? Not exactly. Having these three ingredients in a dish doesn't exactly guarantee a delicious meal. There is a technique in combining and cooking your aderezo to achieve a strong foundation. Having the right amount of onions, garlic, and ají for the volume you are cooking for is crucial. Cooking down you aderezo to the perfect "doneness" Is also very important. Sweating vs caramelizing is a significant and decisive tactic when cooking. There is all these theories as to "when" and aderezo is at its prime stage of "doneness," theories and techniques that I still strive to perfect in my kitchen. chasqui_482 Just the other day I was platting up an Ocopa dish at my job and I started to wonder the origins of Peruvian dishes where sliced cooked potatoes are topped off with some sort of sauce. Now a days these dishes are considered anything but a mere starter to a meal or even a side dish. But it is my theory that these dishes like ocopa, once were substantial meals to the people who did what they could with what they had. It's a really simple dish in origin; queso fresco, aji, peanuts, and huacatay, all stone ground in an ancient mortal and pestle called "batan." This simple and fragrant amalgam of humble ingredients over cooked potatoes, was once the only thing people had to eat. They had plenty of potatoes and with a little imagination and artistry they were able to create therefore transform the the fruit of their labor. And thanks to their motivation through perseverance now a days we have delicious sauces like huancaina, ocopa, and other velvety cremas. With it's minimal approach to it's interior decor and menu, Eqeko is an upcoming Peruvian Restaurant to be reckoned with. It's menu it small and concise...
