chasqui_482 I was recently asked what the name "TacuTacu" ment... And I was completely stumped! Do you know what it means? So, as I sat there in a state of wonder, I decided to look it up and what I found was really interesting. It is believed that the name TacuTacu comes from the Quechua word "takuy" which means a mix or a blend of two things. It makes sense since the dish TacuTacu is a mixture of leftover beans and rice made into anew. Wherever the name came from, I am just happy we have such a delicious criolle dish. My question is: If I make a lomo saltado in a sauté pan by default it cannot be a "true" lomo saltado... So what is it then?? Is it not as delicous? An imitation? Why is it looked down upon? chasqui_482 You know... A friend of mine once told me that when it comes to fish... And therefore ceviche .. Peruvians and very picky. Growing up he never ate tuna ceviche ... And therefore when he saw my tuna ceviche a sense of hesitations and objections were immediately displayed and present. It only took one bite for him to realize that, although not orthodox, it was delicious innovative and relevant. I have seen a lot of chefs really take their ingenuity to a level where they loose touch of a dish's origin and I dare say soul. They take something so simple and turn it to an unrecognizable incongruity. I think you can be fun, playful, and innovative with food and dishes BUT I am also very much in respecting The origin. But, there are some gastronomical ingredients that just lend themselves so easily to multiple applications. For example, Quinoa. This Andean seed can be used in multiple types is cuisines. It is Like a blank culinary canvas ready for anything that might come to you. chasqui_482 As a chef I take inspiration everywhere I can....and I have to admit the Arab foods are not my forte. Kibbeh is a new dish I encountered today. Very Arab, very delicious, and with a lot of possible culinary applications. It's really a pie with seasoned ground beef, chopped walnuts, and golden raisins. The "dough" is actually made not from wheat flour but with cracked wheat called bulgur. And it doesn't end there... Ground steak is added to the bulgur to give it a nice "meaty" feel to it.
