  •   brenna91 @saraeperalta start with 300g butter. Chop up 150g and put aside to soften. Melt the other 150g in a small saucepan on a low-medium heat and cook slowly, stirring constantly with a rubber spatula. It the butter will froth, the milk solids will separate from the fat and after a while they will fall to the bottom of the pan and start to brown. Don't turn the heat up cus it can burn really quick. Take it right to the edge of burnt for a really nutty flavour and then remove from the heat and cool to room temp. Whip up the softened butter until really pale and light. Slowly drizzle the room temp brown butter into the whipped butter while still whipping (you can add a teaspoon of honey now too if you want). Keep whipping for about 5 mins and it will become super super fluffy. Use straight away or put in the fridge to set it's delicious. I had it on fresh banana bread - amazing! 3mon
