botanicaleats warm beet and lentil tartare | steamed lemon garlic greens | turmeric cream

My recipe included. Enjoy!

Warm Beet and Lentil Tartare:
1 1/2 cups French or beluga lentils*, cooked al dente
1 cup filtered water
3/4 cup beets, grated and firmly packed
1/2 of a medium yellow onion, sliced thinly
1 Tablespoon garlic powder
1/2 tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp dried oregano
1/2 tsp black pepper
1/2 tsp sea salt
1/2 tsp lemon juice
1/4 tsp ground red pepper

Green lentils are fine if you cannot find French or beluga, it will just look slightly different due to the lighter color of the green lentil.

1. Saute onion in pot with coconut oil until translucent.
2. Add beets, water, and all spices and seasonings (garlic powder, turmeric, cumin, oregano, red pepper, s&p).
3. Stir, cover and simmer on medium for 20 minutes.
4. After beets are cooked add the cooked lentils, lemon juice and a pinch of sea salt and cook, uncovered on medium heat, for five minutes or until most of the excess liquid in the pot has soaked into the lentils, reduced, and/or evaporated.
5. Press firmly in a ring mold to stack it up, simply put it on a plate with your greens and sauce, or just eat it out of the pot.

Turmeric cream sauce:
2 Tablespoons vegan mayo
1 tsp agave or other liquid sweetener
1 tsp lemon juice
1/2 tsp ground turmeric
Pinch of ground red pepper and sea salt

1. Put ingredients in a little bowl and whisk with a fork.
2. Double recipe if you are diggin' on the sauce because this is enough for 2 people or one sauce lover.

As for the greens:
Pick your favorite, steam them, add some lemon juice and a little garlic powder.

botanicaleats Hi everyone! I have perfected my mock chicken salad and have the recipe to share .

3 cups chickpeas (cooked)
1/4 cup sweet pickle relish
1/4 cup minced celery 
1/4 cup vegan mayo
2 Tablespoons tahini
2 Tablespoon red onion (minced)
1 Tablespoon dill (minced, packed)1 Tablespoon scallion or chives (minced, packed)
1 Tablespoon + 1tsp lemon juice
1/4 teaspoon himalayan sea salt
cracked pepper to taste

1. Mash 90% of the chickpeas (I use a potato masher)
2. Add everything else and stir!
3. Put it on a sandwich or a salad and enjoy You could also add a tsp or so of mustard to your mix if you'd like!
