  •   boozedandinfused @missymaki yes, it is super easy! Check out some of the recipes online for overnight oats. Many of the recipes call for a fair amount of yogurt, which I think overpowers it. I use one part oatmeal, two parts milk or plant-based milk, a few pinches of cloves and cinnamon, chia seeds, chopped walnuts, and whatever fruit you like. (Plus you can add a bit of yogurt if you want, but I just use a spoonful.) mix it all together and let it sit in the fridge overnight. It will be perfect by morning! 2mon

  •   boozedandinfused Modified the recipe as follows: 2 3/4 c. Flour; 1 3/4 c. vegan sugar; 2 1/2 tsp baking powder, 1/2 tsp salt, 1 1/4 c almond milk, 1 c apricot purée, Egg replacer equivalent of 2 eggs, 2 tsp vanilla. %%%% sift all dry ingredients, add in all wet ingredients and mix until just blended. Pour into 2-8" cake pans that have been oiled and floured. Bake at 375 degrees for 25 to 30 min or until done in the center. %%%%%%. In between cake layers, spread strawberry preserves. Top is glazed with mango-peach glaze. %%%% to make the glaze, combine 1/2 c mango-peach juice, 1 T sugar, 1 1/2 tsp cornstarch, 1 TB lemon juice. Heat on stove, whisking until it boils, allow to cool somewhat and then glaze over cake. Decorate with strawberries and glaze over berries. %%%% to make Apricot Purée, 1 c dried apricots, 6 TB water. Heat on stove, allow to boil for 5 minutes, covered. Allow to cool, then purée in food processor. 2mon
