beer_nick So my little screw up ended up being amazing. In my hand straight from the fermenter a chocolate bitter/English pale ale with molasses and maple syrup added. So I missed my mash temp and drew up the recipe wrong but this tastes amazing. Perfect English ale aroma, not overly bitter, light body, sweet malt character and maple and molasses notes. Only 4.7% ABV. And it's not carbonated yet! A few more weeks and it will be in a keg. I need to brew more British style ales. 3d

beer_nick Sour mash'd hoppy saison brewed with lemon grass and orange zest. Now racked with 2.oz of Nelson hops per fermenter and finings. Yes one FV has more then the other. Miss counted during the brew day. Just need to find some cold storage cause that's I'm short supply at my house right now. Kegging soon. 7d

beer_nick Nerdy beer stuff. Since I missed gravity on the ESB I brewed I decided to add 4 oz of maple syrup and 4 oz of molasses at high krausen to boost the gravity where it was supposed to be. So now it will be a chocolate ESB with maple and molasses added. Fingers crossed for this one. Then the tested out the sour mashed hoppy saison. Wow! Finished in a week. Fermented everything. Between 1.010 and 1.006. Wow! And pretty tart. Time to dry hop with Nelson. 1w

beer_nick Wish I could still have a 10% ABV imperial coffee smoked stout on tap at my place. But I try not to be greedy. Go off beer and be enjoyed by others. So that others may drink. 1w

beer_nick Brewed another work collab beer, a chocolate aged ESB. Marris otter, wheat malt, amber malt and two crystal malts. With brewers gold and east kent goldings hops. English ale yeast. 1.060 was supposed to be the original gravity but got 1.046 instead. Gonna look through my notes and see what I did wrong. I'm sure with was my mash temp I kind of fuck up. Either way it will still be beer. Gonna try and talk my co brewer letting me add maple syrup to the beer at high krausen to boost the gravity. When the beer is done fermenting add coco nibs and vanilla. 1w
  •   beer_nick Picture of the knock out phase. Cool wort from the heat exchange into the fermenter. A nice hop mound in the kettle from the whirlpool phase. 1w

beer_nick It's on! My latest collaboration with one of my co workers. Imperial coffee smoked stout. With bobo's cold brewed coffee added. Over 30% smoked malt used, a ton of brown sugar and 10% roasted barley. With a huge 10% ABV and around 50-60 IBU's. The biggest and darkest beer I've brewed. Medium bodied. Super coffee and dark chocolate aroma and flavor. With hints of smoke. Really stoked for this. A little tweaks here and there but super stoked for this. Had a few QC glasses last night. 1w
