angeliqueseats The trick to a great carbonara is patience. That might seem counterintuitive for a dish that is the food equivalent of a naughty coat room quickie (fast, delicious, probably not the healthiest choice). My recipe for One is as follows:
-Get the pasta water boiling
-Chop 2-3 strips of bacon and toss in a pan
-Get the pasta cooking. -Render and brown bacon -In a small bowl whisk one large chicken/duck egg, 3 tlbs cream, 1 tsp mustard, salt and pepper
- after the bacon is browned, remove from pan (leave the love juice/fat in the pan)
- deglaze with 5-8 tlbs spoons of white vermouth -once the vermouth no longer smells offensively boozy (if that's possible) toss in the cooked pasta

OKAY now listen carefully.
Remove the pan from the element, pour the egg/cream mix over, GENTLY toss, cover and DO NOT TOUCH, DO NOT put the pan back on the heat. If you put the pan back on the heat, or if you excessively stir, you'll cause the egg to scramble, and the goal is a velvety light sauce. Let it sit quietly for 3-5 minutes.(don't rush it!!) Add parsley if you like and enjoy; in a bowl or right from the pan.

angeliqueseats Homemade crab cakes. Made with 1.5 lbs of fresh Dungeness crab meat, two duck eggs beaten, 1 tlbs mayo, 1 tsp tarragon mustard, 1/4 seasoning salt, 1 cup bread crumbs (freshly made from yesterday's Turkish bread loaf). The cakes were cooked by pan frying, broiling, (flip) and then finishing in the pan. I have now ruined restaurant crab cakes for myself. The texture is crunchy on the outside, and moist, toothsome, and ever so slightly eggy in the inside . Served with a spritz of lemon. Happy Sunday.
