andreawhitlow I love taking unhealthy recipes and putting a healthier spin on them! This one was the ! Sausage and bacon breakfast casserole with kale, mozzarella cheese and asparagus:
Ingredients:
6 @vitalfarms eggs
2C @horizonorganic shredded mozzarella cheese
2C @horizonorganic 2% milk
12oz @simpletruth4u sausage links
4 pieces @simpletruth4u bacon
6 pieces low sodium @foodforlifebaking Ezekiel sprouted grain bread
1 1/2C chopped organic kale
10 organic asparagus spears
Salt & pepper (I use pink Himalayan salt and black peppercorns from a grinder)
@simpletruth4u extra virgin olive oil
Steps:
1. Cook sausage and bacon. Using a masher, break up sausage links into desired consistency (I like chunkier pieces which is why I don't use ground sausage). Add bacon and mix, breaking up into small pieces. Set aside, covered, to cool

2. In a Pyrex dish, drizzle olive oil and spread with your hand to coat entire dish. Cut the crust off bread, tear into medium/small pieces and cover the bottom of Pyrex dish

3. Add kale to sausage and bacon, mix throughly then pour over bread

4. Sprinkle cheese evenly over sausage/bacon
5. Mix eggs, milk, a touch of salt and as much black pepper as you want
6. Pour egg mixture over dish and top with asparagus spears - cover with aluminum foil & refrigerate overnight (or at least 8 hours)
7. Put 5 or 6 1 inch slits in top of foil. Bake at 350 for 35-40 minutes. Remove foil & broil for about 1-2 minutes to make the cheese crispy and brown

8. Remove from oven, recover with foil and cool for a few minutes

Voilà!
