allkindsoflovelyblog today was gloomy so i made creamy roasted cauliflower soup. comfort in a bowl. here's the recipe:
2 tablespoons olive oil
1 head of cauliflower, cut into small florets
1 medium onion, finely chopped
1 medium leek (white & light green parts only) halved lengthwise and sliced crosswise
3 cloves garlic, peeled
3 cups chicken stock
1 cup unsweetened coconut milk (or cream)
1 tablespoon fresh thyme leaves
salt and pepper
preheat oven to 375F. place onion, leeks, garlic and cauliflower in a large oven proof dish or sheet pan and drizzle with olive oil. sprinkle with some salt and pepper.
roast for 25 to 30 minutes or until golden.
transfer the roasted veg into a large pot. add the stock, coconut milk (or cream) & thyme leaves.
bring to a boil over medium/high heat.
reduce the heat to medium, cover, and simmer for 10-15 minutes or until all the vegetables are tender.
purée the soup in a blender (take care with this part!).
adjust the seasoning to your taste.
serve with a toasted bread star, a drizzle of olive oil, pepper and some thyme leaves. enjoy!

allkindsoflovelyblog nutty baby kale chips (my first time making kale chips!) here's what to do: preheat oven to 325. set 2 racks on 2 large baking sheets. in a large bowl, whisk 1/2 cup raw almond butter with 1/4 cup canola oil and season with kosher salt. add four cups baby kale leaves and massage to coat. arrange on the racks in single layers. bake for about 20 minutes, rotating the baking sheets, until the kale is golden and almost crisp. let cool completely before serving (the leaves will crisp up as they cool). recipe via @foodandwine whose recipes i've been loving on lately. 3w
