  •   13donnamarie In a frying pan, I heated up some butter and olive oil for the eggplant to slightly cook and get crispy in before going into the oven. As a healthier alternative to an egg bath and flour coating, I used egg whites and breadcrumbs instead. So, dip each eggplant wheel (this is how you want to cut your eggplant) in egg, then breadcrumbs then fry until golden brown. Then, put them in a plate lined with paper towel to absorb some of the oil. Continue this process until you're out of eggplant to fry. For the sauce, I can't really tell you how to make it because it's a secret BUT fresh tomatoes, basil, chilli flakes and garlic are my friends In an oven safe pan, line the bottom with sauce then line up some eggplant wheels, then sauce and continue this process until you're out of both, finish with shredded mozzarella (or any cheese of your choice) and bake at 350 degrees until the cheese is melted and ooey gooey! 3w
